These kid-friendly muffin-style pancakes are a fun and easy way to make breakfast… and the best part is everyone can choose their own creative mix-ins.
Using a muffin tin is a clever tip for making an entire batch of pancakes at once, and is more convenient than standing at the stove making them individually! If you’re like me and just getting used to the back-to-school routine, try these for a simple yet delicious homemade breakfast idea.
Tips for making the best homemade pancake muffins:
- Pick any topping your family enjoys like fresh or frozen berries, dried fruit, nuts, etc. The chopped bacon with a maple syrup drizzle is my favorite combo!
- This old-fashioned fluffy pancake batter is my favorite when making fluffy pancakes, but you can probably create something similar using Bisquick or another premade pancake mix if in a rush.
- Pancake muffins can last around 4 days in the fridge when placing them in a container with a lid. They could last for up to a couple of months in the freezer. To reheat, microwave for 30 seconds or so, and enjoy!

Ingredients
For the pancake batter:
- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 tablespoon white sugar
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 4 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 egg
Pancake muffin mix-in ideas:
- 3 tablespoons chocolate chips
- 3 tablespoons fresh blueberries
- 3 slices of cooked bacon, chopped
- 1 banana thinly sliced & 1/4 cup chopped walnuts
- real maple syrup, drizzle

Preheat the oven to 375. Prep a muffin pan with liners or grease it well.

To a large batter or mixing bowl, add the flour, baking powder, sugar, and salt. Whisk together to combine.
Tip: Level the flour properly by spooning into the measuring cup and leveling off the top. Do not scoop.

Add the milk, vanilla extract, and egg to the bowl and whisk the ingredients together until smooth. Then mix in the melted butter. The batter should be neither super thin nor super thick, yet pourable.

Evenly distribute the pancake batter into 12 muffins. Filling 3/4 full seemed to work for me.

Add pancake mix-ins to each muffin. You can gently press add-ins down a bit. I did 3 muffins of each flavor.

Bake for 22-25 minutes until cooked. You'll know they are cooked through when a toothpick inserted comes out clean.

Remove from the oven and let cool. Serve warm with maple syrup drizzle. Enjoy!

“These were delicious! Plus, they were super simple to make and you could even make it more simple by using a store-bought pancake mix. My daughter loved helping make them and mixing up the additions (she made a blueberry, chocolate chip, and banana one)!
These would be so great to whip up on a Sunday and then toss in the fridge for the rest of the week for quick breakfasts, especially since your kiddos can customize their favorite flavors. I even found that some of the flavors, like the chocolate chip, I didn’t need the syrup as they were great on their own. The bacon ones are so good, especially with syrup!”

Thank you for this. I can’t wait to try it. I like that you provided a recipe from scratch. After trying your recipe, the next time, I’d like to try it with half whole wheat flour, and see how that goes.
I’m also going to mix in diced ham. I buy a precooked slice of ham and cut it up to add to recipes.
I love that this will be waaay faster than standing at the stove waiting for individual pancakes to cook, then flipping them and cooking some more. Who has time for that, one pancake at a time?
A time-saver l use when making cupcakes is to make up the batter in a half-gallon juice jug, to make for fast, easy, clean pouring, so I will use that for this recipe,too.
