Cheesecake Stuffed Strawberries
yield: 20 SERVINGS
prep time: 20 MINUTES
total time: 20 MINUTES
Sweetened cream cheese filling is stuffed inside fresh strawberries, as a delightful and easy to make summer treat!
- 8 oz. cream cheese block, softened
- 1 pound large strawberries
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 graham crackers, crumbled
- blueberries (optional for the top)
Wash and dry strawberries. Cut off the tops and use a small pairing knife to cut out the middle of each strawberry carefully. If you'd like the strawberries to stand on their own, cut a small piece off of the bottom of the strawberry to create a flat base.
Using a hand mixer, whip together the powdered sugar, vanilla extract, and softened cream cheese.
Fill a pastry bag or ziptop bag and snip the corner end off for piping. You could alternatively use this highly-rated Wilton Dessert Decorator (it's my favorite!). Pipe the cream cheese filling into each strawberry, overfilling slightly.
Sprinkle graham cracker crumbs and add a blueberry on top if desired. Serve cold and enjoy!
Hip tips for making these cheesecake-stuffed strawberries
- Try to find the biggest strawberries you can for this recipe.
- It may help to cut the bottom of your strawberries flat so they stand up.
- You can also opt to serve your berries in these mini cupcake wrappers so they’re easier to handle and less of a mess.
I love this Wilton kitchen tool for piping!
I prefer to use my Wilton Dessert Decorator instead of pastry bags. I’ve had this device for years and use it all the time for both decorating desserts and for stuffing savory appetizers!
The components come apart easily for convenient washing, and the decorating tips are easy to swap out. Plus, they never seem to get misplaced, as they are a lot bigger than the small metal tips commonly used for pastry bags.
Best of all, this tool is so much easier (and faster) to fill than the floppy pastry bags. And unlike the disposable pastry bags, it can be refilled and reused over and over again. I highly recommend it!

These look so delicious! Will be making this for our next cookout.
Yum thanks Lori!
I have been making these for awhile and they are always a hit. When I am feeling “lazy” or I am short on time I buy the ready made pillsbury cheesecake filling, you just scoop it right into the strawberry and eat! Very simple
Can I use whipped cream cheese? i just bought a big tub.
Hmm ya I think that’d be good, just maybe a lighter texture 👍
I’ve been making these for years! My daughter goes crazy over them but I didn’t think about adding a blueberry on top! I think that would be great for a 4th of July themed picnic or dinner, thanks!
