Easy Cheesecake Stuffed Strawberries

Cheesecake Stuffed Strawberries

Sweetened cream cheese filling is stuffed inside fresh strawberries, as a delightful and easy to make summer treat!
Ingredients
- 8 oz. cream cheese block, softened
- 1 pound large strawberries
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 graham crackers, crumbled
- blueberries (optional for the top)
Directions

Wash and dry strawberries. Cut off the tops and use a small pairing knife to cut out the middle of each strawberry carefully. If you'd like the strawberries to stand on their own, cut a small piece off of the bottom of the strawberry to create a flat base.

Using a hand mixer, whip together the powdered sugar, vanilla extract, and softened cream cheese.

Fill a pastry bag or ziptop bag and snip the corner end off for piping. You could alternatively use this highly-rated Wilton Dessert Decorator (it's my favorite!). Pipe the cream cheese filling into each strawberry, overfilling slightly.

Sprinkle graham cracker crumbs and add a blueberry on top if desired. Serve cold and enjoy!
Hip Tip: Try to find the biggest strawberries you can for this idea. It helps to cut the bottom of strawberries so they stand up. You can also serve these in mini cupcake wrappers for less mess.

I prefer to use my Wilton Dessert Decorator instead of pastry bags. I’ve had this device for years and use it all the time for both desserts and for stuffing savory appetizers!

I have been making these for awhile and they are always a hit. When I am feeling “lazy” or I am short on time I buy the ready made pillsbury cheesecake filling, you just scoop it right into the strawberry and eat! Very simple
