Cheesecake Stuffed Strawberries

Ingredients

  • cream cheese 8 oz bar, softened
  • 1 pound large strawberries
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 graham crackers, crumbled
  • blueberries (optional for the top)

Directions

Wash and dry strawberries. Cut off the tops and use a small pairing knife to cut out the middle of each strawberry carefully.

Using a hand mixer, whip sugar, vanilla, and cream cheese together. Fill the inside of each strawberry using a pastry bag, plastic bag with the bag snipped, OR use this highly-rated Wilton Dessert Decorator.

Sprinkle graham cracker crumbs and add a blueberry on top if desired.

Hip Tip: Try to find the biggest strawberries you can. It helps to cut the bottom of strawberries so they stand up. You can also serve these in mini cupcake wrappers.

As I mentioned above, I prefer to use my Wilton Dessert Decorator instead of pastry bags. I’ve had this device for years and use it all the time for both desserts and for stuffing savory appetizers. The parts come apart easily for convenient washing, and the decorating tips are easy to swap out. Plus, they never seem to get misplaced, as they are a lot bigger than the small metal tips commonly used for pastry bags.

    I made these and they were yummy! they get soft/mushy if more than a day goes by so it’s best to serve them right after preparing

    This sounds delicious!!! We do one very similar and even easier! We hollow out the strawberries, but add some chocolate chips in the center & top with Redi Whip spray whipped cream!! Bite sized chocolate strawberries & cream!

    I tried making these for Mother’s Day but I used the reduced fat cream cheese and the consistency was way off. It was disappointing because they are so pretty. This is one recipe where sticking with the regular cream cheese might be your best bet. Lina, I always love your posts! I just finished making a flag pallet that you had posted quite awhile ago. Turned out great!

    I made these at Christmas with sprinkled graham cracker crumbs on the top instead of the blueberry. They were delish! It is helpful to get big / same size strawberries. Its easier and it looks better on the serving dish.
