Cheesy Potato Casserole

Ingredients

  • 2 cups corn flakes cereal
  • 1/4 cup butter, melted

Directions

Preheat the oven to 350 degrees.

In your largest mixing bowl, combine thawed hash browns with the soup, sour cream, onion, melted butter, shredded sharp cheddar cheese, garlic powder, salt, and pepper.

Spread the mixture in a 9x13 casserole dish. Sprinkle the parmesan cheese on top.

In a bowl use a spoon to crush the cornflakes and stir in the melted butter. Spread that mixture on top of the casserole.

Bake at 350 degrees for about 45-50 minutes until browned and bubbly. Serve warm.

If you’re looking for a delicious side dish to feed holiday guests, consider turning a bag of frozen hashbrowns into cheesy funeral potatoes. The end result is a mouth-watering gooey casserole with a crunchy buttery cornflake topping – perfect for any special occasion or gathering.

I personally have always loved this dish during the holidays and special occasion brunches such as on Easter Sunday. The ingredients are simple and it’s quick and easy to compile before placing in the oven.

Why are they called funeral potatoes?

Funeral potatoes are often associated with funerals and potluck-style gatherings as traditional comfort food. It’s an easy and affordable dish to serve a crowd at a reception or celebration. According to Dictionary.com, “The name comes from the Mormon practice of serving the dish at receptions after funerals, especially those planned by a woman’s group called the Relief Society.”

Tips for making cheesy funeral potatoes:

  • If the cornflake topping doesn’t sound appealing you can use crushed potato chips, crushed crackers, breadcrumbs, or crispy fried onions.
  • Use cream of mushroom soup in place of the cream of chicken soup if desired. Homemade cream of chicken soup is pretty easy to make yourself if you prefer!
  • Crockpot Funeral Potatoes Directions:  Add all of the ingredients to the slow cooker and cook on high for 3 hours. For the topping, do that step after the 3-hour cooking time and let it cook for an additional 15 minutes with the lid closed.
  • add cooked shredded chicken or ground meat to the bottom of dish to transform this side dish into a comforting meal
  • Cover and store leftovers in the fridge for up to a few days or in the freezer for up to 3 months.

I appreciate that anyone can throw these cheesy potatoes together and have them come out consistently delicious each time. I specifically love to serve this alongside ham or as a brunch side dish with bacon and eggs. It’s comforting and so darn GOOD! This casserole is also a perfect Thanksgiving side dish to pair with turkey. You can easily double the ingredients for larger crowds.

    If you use condensed cheese soup instead of cream of chicken, it will be vegetarian. Since one of my daughters is a vegetarian, we always make it like this! (It’s still not vegan, of course!)

    Our family just calls it cheesy potatoes but they are not made like this. We use a block of cream cheese and I use 2 soups, 1 chicken and 1 mushroom. I also blend those together. We don’t use parmesan just cheddar and use diced frozen potatoes.

    These potatoes seem to be a little mushy. I usually put extra potatoes and decrease the sour cream. We don’t eat them often but they are easy to make… but not healthy at all 😬
