Fresh Strawberry Pie

yield: 6 SERVINGS

Ingredients

  • 9 inch pie crust - store bought or homemade
  • 2 pints of fresh strawberries
  • 1/2 cup sugar
  • 3 oz. package of strawberry gelatin
  • 2 tablespoons cornstarch
  • 1 cup of water
  • whipped cream

Directions

Bake pie crust according to package directions, and let cool.

Wash and slice strawberries (I left some whole and sliced the larger ones).

In a saucepan over medium-high heat, whisk water, cornstarch, and sugar together. Bring to a boil and stir for a couple of minutes until thickened. Remove from heat and whisk in gelatin until dissolved. Let mixture cool for 10 minutes.

Arrange strawberries on top of pie crust. Pour gelatin mixture on top of strawberries. Place in fridge to set for a couple hours. Serve with whipped cream if desired. Makes 6-8 servings.

If you’re looking for a super quick and delicious dessert recipe, try this easy and fresh strawberry pie! This crowd-pleaser can be made ahead of time and stored in the fridge – then just garnish with whipped cream when ready to serve.

It’s really as simple chopping up some fresh strawberries, whisking up strawberry-flavored gelatin, and combining them in a store-bought pie crust (or you can use your favorite pie crust recipe if desired).

Bonus points if you top off the finished product with cool and creamy whipped cream! YUM!

    Yum! Thanks for the idea. I think adding blueberries would be good. And if you use whipped cream, you’d get the whole red/white/blue Americana vibe going.

    Yumm. Same recipe I use besides a different thickener.

    Make sure you mix the cornstarch with the sugar well before you add it to the water, otherwise you’ll have clumps. I make a similar recipe that’s a family favorite- soooo easy and always a crowd pleaser!

    Haven’t made any pies before, and wondering what the strawberry gelatin is for?

      Basically it’s a filler. I’ve made this many times and it’s delicious! I use Marie Calendar pie crust in the freezer section.

          I made this today. It was delicious and so easy! I didn’t change anything on recipe except that I used a pre-made graham cracker crust. I’ll definitely make this again!
