Easy Fresh Strawberry Pie

yield: 6 SERVINGS

cook time: 60 MINUTES

total time: 1 HOUR 10 MINUTES

Ingredients

  • 9 inch pie crust - store bought or homemade
  • 2 pints of fresh strawberries
  • 1/2 cup sugar
  • 3 oz. package of strawberry gelatin
  • 2 tablespoons cornstarch
  • 1 cup of water
  • whipped cream

Directions

Bake pie crust and let cool.

Wash and slice strawberries (I left some whole and sliced the larger ones).

In a saucepan, whisk water, cornstarch and sugar together. Bring to a boil and stir for a couple of minutes until thickened. Remove from heat and whisk in gelatin until dissolved. Let mixture cool for 10 minutes.

Arrange strawberries on top of pie crust. Pour gelatin mixture on top of strawberries. Place in fridge to set for a couple hours. Serve with whipped cream if desired. Makes 6-8 servings.

    I might try this! I have so many strawberrys from our garden this year I dont know what to do with them all.

    I use to make this in high school, it was my boyfriend’s favorite. I sliced the berries up thinner. That helped them lay down and form more of a pie shape. Thanks for reminding me of this recipe, my husband will be so excited, it’s been a while.

    I’ve made this recipe for years! A couple things I do differently…mix the strawberries with the “strawberry goo”, then add it to the pie crust. I also use a homemade graham cracker crust. It’s always a hit with family and friends 😉

    I make a similar strawberry glaze pie but I make it in a store bought Oreo graham crust. Seriously, it is so good. Think chocolate covered strawberries…. Mmm

    I just love the simple taste of the baked pie crust. I used to make these with the graham cracker crusts too but it just seems so much better when I changed to a baked pie crust.

    Love this pie, every time I make it the pie is gone in minutes. I add the strawberries to a bowl and mix with the gel. Then add to pie crust. So So good.

    Do you think we can make this without the cornstarch? The gelatin should solidify, correct? Heading to the mts and no time to buy cornstarch!
