Fat Head Pizza Crust Recipe (Finally a Low Carb Pizza I LOVE!)

Fat Head Low-Carb Pizza Crust

yield: 8 SERVINGS

prep time: 15 MINUTES

cook time: 15 MINUTES

total time: 30 MINUTES

Ingredients

  • 3/4 cup almond meal/flour
  • 1 and 3/4 cups mozzarella cheese, shredded
  • 2 tablespoons cream cheese
  • 1 egg
  • pinch of salt
  • 1/2 teaspoon Italian seasoning
  • Desired pizza toppings (tomato paste or sauce, mozzarella cheese, pepperoni, mushrooms, bell peppers, etc.)

Directions

Preheat your oven to 425 degrees. Combine almond flour and mozzarella cheese in a microwave safe bowl. Add in cream cheese and cook for one minute.  Stir, and cook for an additional 30 seconds in the microwave.

Mix in egg, salt, and Italian seasoning, and stir.

Shape the dough into a ball and place between two pieces of parchment paper.

Use a rolling pin on top of the parchment paper to roll dough in a circular shape. (Mine was more of an oval.)

Remove the top parchment paper and slide dough onto a baking sheet or pizza stone. Bake at 425 degrees in the oven for 12-14 minutes until slightly browned.

Add any desired pizza toppings and sauce you’d like to the top of the crust. (Keep in mind, if using raw meat you’d want to cook it first before putting on pizza.) Continue cooking in oven for 5 minutes until cheese melts.

Love pizza, but not the carbs?!🍕

You’ve gotta try making Fat Head pizza dough out of cheese and almond flour! It tastes great, is keto-friendly, low carb, gluten-free, and happens to be super simple method using just a few main ingredients. Plus, I like that the texture is chewy like normal pizza dough, and sturdy enough to pick up a piece to eat!

Fat Head Pizza is a very popular low-carb recipe idea online and also happens to be a favorite among several of my fellow Hip2save sidekicks, so I was excited to try it out!

This Fat Head pizza crust recipe is finally a low carb pizza I love! You're going to love it, too!

Ingredients

  • 3/4 cup almond meal/flour

Things to Consider:

  • I diced bell peppers and mushrooms and sauteed them first on the stove before topping my pizza, but that’s just personal preference.
  • I’ve read that you can substitute 1/4 cup of coconut flour instead of almond flour, but haven’t tried it yet.
  • Next time I may try flipping the Fat Head pizza crust over halfway through baking for a more evenly cooked crust.
  • You can divide pastry and make smaller personalized pizzas!
  • This pastry would make delicious “garlic bread” and a bread substitute for various other recipes!

No joke ~ this pizza is YUMMY! We liked the taste and texture better than cauliflower pizza!

    A totally dumb question, I’ve tried it 3 times and using Pam and a little almond flour, it’s sticking to the paper. Any suggestions?

      Be sure you are using parchment paper (not waxed, or foil).

        Yep, I didn’t realize it either but I had something that called for parchment paper and I used wax paper. Completely different outcome 😄

      I pat mine out onto the parchment paper into a circle. Then I cook the pizza right on the parchment paper, Bob. No need to remove the crust from the paper. No pan necessary! And yes, parchment, not wax!

        Some Parchment paper is not non-stick. I have tried the stuff from the Dollar Tree and my cookies stuck to it.

          I roll mine out between parchment paper the flip it on my pan sprayed with Pam and it doesn’t stick at all.

          The non-stick paper is awesome. I put the dough on one piece then put another piece on top & spread the dough out using my hands. Then just peel the top piece off. It’s quick & I don’t have any issues with sticking

    I’m out of Almond Flour. Can I use coconut flour instead and how much would I use?

          Totally! Coconut flour is a lot more absorbent so you need a lot less when you use it instead of almond flour.

    I make this all the time – and everybody loves it! A few suggestions… the dough is REALLY sticky, so I roll it out between silicone baking mats. You can get them anywhere, but here’s some on Amazon: https://a.co/8Wm8dus. I also spread about a tablespoon of oil olive between the mats, which makes the dough really easy to work with, plus the olive oil tastes great. Next, I use AirBake pizza pan because the little holes cook the dough, top and bottom, all the way through. The pans are also available anywhere, but you can get them on Amazon too: https://a.co/16wAdaT. Almond flour give you a
    “regular” crust, whereas coconut flour gives you a slightly sweeter crust – both taste great!

    Can you tell me how many servings there are and what’s the carb count per serving?

      You get 6 slices out of 1 crust, and each slice is about 4 calories, NOT including the toppings. If you want a more accurate calorie/carb count you have to use a recipe calculator. It looks deceptive, but it’s a very filling dough and 2 slices is always enough for my husband and I when I make it.

        Can’t possibly be only 4 calories! 2 oz cream cheese alone has 200 calories, even dividing that by 6 that’s at least 30 calories per slice. Perhaps you meant 340?

      Hiya…. Ive worked out the macros for this, bear in mind ive added a pineapple slice on mine 🙂

      Carbs 4.1
      Protein 12.3

      So for half a pizza (3 slices) as follows
      Kcal : 514.5
      Fat : 31.8
      Carbs :12.3
      Protein : 36.9

    Have you tried freezing these? I’m a working single mom so I have to make everything on my one day off work for the whole week. I was thinking I could have a few of these at one time, freeze them between the paper and pull one out, slap some toppings on it for a quick dinner.

      I haven’t tried but have been reading how many people have bake the pizza crust – then freeze it. You can do individual sized pizzas too.

        You can make the crust and cook it. And freeze at this point OR top it with fab toppings a sauce and freeze at this point making it so you just take out if the oven and pop it in the oven for a super quick healthy supper on the go 😊

    I have tried this 3 times so far. I love it. I make a whole pizza, cut it in slices then freeze each individual slice. They are great for lunches or for the meals I make my family that aren’t Keto friendly. I find this pizza extremely filling. I use to eat 3-4 slices of regular pizza and then feel full. But with this I’m completely full after 2 slices.

      If you don’t have (or don’t want to use) a microwave. I suggest using a double boiler that way ther is basically no risk of burning/scorching the cheese 🙂

    Are there any recipes similar to this, but with little or no dairy? My body struggles with dairy and gluten. I would love to find something that I can make and yet doesn’t cause digestive troubles.

        I am Celiac and total Dairy myself as well and just found the recipe today. I was thinking of making vegan cheese for the mozzarella and the cream cheese you can find the recipes on the web or Pinterest the real easy to make from what they look like I am still on the upswing and strength is just getting stronger another option is goat cheese it has a different chemistry than cow. Both almond flour and coconut are paleo and gluten-free as well as kosher and vegan

    Just made this recipe for the first time and it was amazing. Next time I will roll out the crust s little thinner. I put the toppings on and cooked it for the 5 minutes or until the cheese melted and also browned it with the broiler! Will serve it again. Thank you!

    I saw your live video where you made this pizza (though I missed the first couple minutes). I made this for dinner that very same night, but I mixed up my conversions and used 1 1/2 lbs. of cheese, instead of 1 1/2 cups (essentially doubling the amount of cheese). It turned out amazing! And your tip about letting it get all the way brown, and then flipping it onto a new piece of parchment before adding toppings really gave it a “crust” texture. Thank you for this recipe.

    Hi! I made this a few nights ago. I didn’t realize there was a blanched vs unblanched almond flour and I ended up buying and using the unblanched one (my Kroger didn’t even have the blanched flour). Both me and my 5 year old liked it but after I use up the rest of the unblanched I am definitely going to look for the blanched almond flour. Thank you for the recipe!!

          So is this just for the crust? When I entered in ingredients plus toppings I got 256 a serving. When I was making the ingredient and serving lost I out 6 slices, so is that 356 for all 6 servings?

    I don’t follow a keto diet, but I try to avoid carbs in the evening. I think making regular pizza dough is a pain; I don’t like to make anything that involves yeast. So I never make homemade pizza and when we want pizza we order it from a restaurant. So unhealthy, right, but oh so yummy. So I was excited to try this recipe. I didn’t have mozzarella cheese, so I used cheddar and it turned out GREAT. I’m guessing any cheese would work. I used my hand mixer to blend all the ingredients. We made it a pepperoni pizza and loved it. I baked it on an air-bake pizza pan. My son asked for pizza again tonight. My boyfriend asked for a Hawaiian one tonight. Almond flour is EXPENSIVE, so once I’ve used it up I’m going to try it with coconut flour. I’m going to try just eating the crust someday, maybe put olive oil and sprinkle parmesan cheese on top. I love the tip of rolling it out between parchment paper, which worked great. I’m going to try that the next time I have to roll out anything. Thank you for the recipe and the video you did showing how easy it is. I was easier than I expected.

    So is everyone but me on here millionaires? Cuz I can’t find almond flour for less than 13 dollars a bag. The hospital bills for the heart attack I get by eating regular pizza would be cheaper! 😛

      My family doesn’t eat any processed food. We buy no cereal, no crackers, no chips, no canned food, no pasta, no bread,no sugar, no flour,no fruit, we eat a little dairy, nothing pre made or frozen, no frozen pizza. Our grocery list is meat, cauliflower, broccoli, asparagus, mushrooms, cheese, eggs, butter, cream, some nuts and almond flour. To use 3/4 of a cup of almond flour once or twice a week is worth every penny to us. I have bought almond flour at Walmart for $11.00 an 8 cup bag, about $1.00 per pizza crust. Plus the mozzarella and egg for crust and toppings.( At our hospital a heart attack is in the tens of thousands!)

      Honestly, you can get finely ground almond flour on Amazon for about between 6-7 $ per pound. (comes in a 3lb bag). This is arguably more expensive than regular flour… but WAY cheaper than $11 per lb. Also I was told that Winco sells it bulk for around $3 per pound. Although I have not verified it yet.

    This is amazing! My oven must be a little hot because I have to watch it pretty closely and pat down the air bubbles. Total cooking time was only about 7 minutes. I like to leave it in with the toppings on it a little longer so I slightly underbake the crust. After the first one, I omitted the Italian seasoning and liked it better. Great recipe!!

    Great recipe!! I ended up splitting dough into 4 personal size pizzas. 4 slices per pizza. Only needed 1 TBS Tomato sauce per pizza. I used my tortilla press and it made a perfect size and thickness for the crust too. Excited to use this dough for other meals.

    This pizza crust is the best one out there. You can actually pick up a slice and eat it like a real slice of pizza and the taste is great. Rarely do you get great taste and good consistency with low-carb recipe variations. This one is a keeper!

    I use this recipe & made it as a Ruben Pizza with Sauerkraut, Thousand Island, Caraway Seeds & Provolone Cheese for a change up! My husband insists we have Ruben or regular Fathead every Friday night! Dr has taken him off all Diabetes meds & several heart meds after 2 years of following the Low Carb plan plus 40 lb weight loss. This is our lifestyle way of eating.
