Fresh Avocado Feta Salsa

Ingredients

  • 2 plum tomatoes, chopped
  • 2 medium sized avocados, chopped
  • 1/4 cup red onion, chopped
  • 1 garlic clove, diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 jalapeno, diced, seeded
  • juice from 1/2 a lemon
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • pinch of pepper
  • 4 oz. feta cheese crumbles

Directions

Mix tomatoes, avocado, onion, garlic, parsely, and jalapeno. Mix in lemon juice, olive oil, salt & pepper. Mix in crumbled feta.

Chill for an hour in the fridge. Serve with desired crackers and dippers.

This Fresh Avocado Feta Salsa is one of the best things you’ll ever eat on a cracker!

Does your family love feta cheese and fresh avocado?

These are two of my favorite foods separately, and if you pair them together as a creative appetizer dip, you get an unbelievably awesome snack you’ll be excited to serve at your next shindig!

It’s like a Mediterranean salsa mash-up that’s so yummy. Plus, I love that it’s super easy and simple to throw together at the last minute, and it doesn’t require a ton of effort, yet tastes fancy!

I LOVE the ingredients in this Fresh Avocado Feta Salsa!

Of course, I love the avocado and feta combo, but then when you add in the onion, garlic, fresh parsley, and lemon juice, the whole mixture is beaming with lots of bright flavors. I added half a chopped jalapeno pepper too, but you could always add more, or leave it out if no spice is preferred.

I used parsley, but other fresh herbs like cilantro or basil would be yummy as well. This is something you can really get creative with and make your own and adjust to taste.

Hip Tip: I recommend you choose avocados on the firmer side if possible instead of super soft ones that may make this salsa mushy. Just something to keep in mind!

Just chop up all the ingredients, mix together, and serve with your favorite chips, crackers, or veggies! It really is that easy.

Serve this salsa in any smaller type bowl, but if you’re interested in mine, I’m using this pretty mortar and pestle for serving as pictured in these photos.

If you plan to make this salsa a little bit ahead of time, I would leave out the avocados until right before serving to avoid browning.

Get your dip on!

I served mine with club crackers and melba toasts, and it was perfect basketball watching food over the weekend. You could also serve with some cheese whisps, celery, or another veggie dipper for any low-carb eaters out there. This is such a great snack to share with friends! We enjoyed it and I know you will, too.

P.S. I would try to enjoy this within the first 24 hours of refrigeration, as avocado has a tendency to brown–but that’s assuming you couldn’t eat it all in one sitting like we did–ha!

I’ll add that the feta you get in the brine from Whole Foods is much tastier than the crumbles pictured and lasts a lot longer in the fridge if you have one near you. You could also get it at specialty shops, but I understand that’t not an option for everyone. I just had to share that as a Greek immigrant, I got the Athenos feta crumbles once and the texture was way off and they tasted of feet. So if you think you don’t like feta, maybe try the authentic brined feta and you will be amazed.
