Keto Buffalo Chicken Soup Recipe
Looking for a delicious and easy to make low carb soup?!
Here’s a Hip-tested and team-approved meal idea that we prepared during our Hip2save team retreat last week at Collin’s home. Everyone agreed this creamy Keto Buffalo Chicken Soup was flavorful and delicious! 😋
Keto Buffalo Chicken Soup
yield: 4 SERVINGS
Grab some hot sauce and make this delicious tangy and cheesy Buffalo Chicken soup for dinner!
Ingredients
- 2 tablespoons butter
- 4 ribs celery, chopped
- 1/2 of an onion, chopped
- 3 garlic cloves, chopped
- 6 cups chicken broth
- 2 tablespoons ranch dressing mix
- 2/3 cup hot sauce
- 1 cooked rotisserie chicken, shredded
- 3 cups cheddar cheese
- 2 cups heavy cream
- Blue Cheese for topping if desired*
Directions

Saute celery, onion, and garlic, with butter on the stove until tender and translucent.

In a stockpot, add chicken broth, sauteed veggies, ranch dressing mix, hot sauce, and shredded chicken. Let simmer on the stove for about 15 minutes.

Reduce heat and add cheese and cream before serving. Stir to combine.

Serve with crumbled blue cheese, if desired.

We used a pre-cooked rotisserie chicken for convenience, but you could always use leftover chicken or cook chicken specifically for the soup. In fact, if you’re wanting to make this as a one-pot Instant Pot meal, see the recipe that inspired us for those directions.
Note: We tripled this recipe to feed all our Hip2Save team members and it turned out fantastic. If you’re needing to feed a crowd, this comforting soup is a great choice!

I loved that this recipe was so darn easy to throw together and it’s a warm and cozy meal for a cool fall evening. My family loves buffalo flavored anything so I’ll be making this again soon for them.
We all felt like this ratio of hot sauce balanced out the amount of heavy cream, but if you’re concerned about it turning out too hot, just add in part of the hot sauce and then the rest to taste according to your family’s desired level of spiciness.

This sounds yummy.i had surgery a few years ago and I am trying to get back on track of a diet high in protein, low in carbs, though this probably has a pretty high fat content, I am gonna try it!

Yes, sure am! I’ve been eating a low carb/high fat diet for over 2 years now, and truly have never felt better. Prior to eating this way, I had digestive issues, lots of bloating, and was often constipated. No fun at all. 😩 Since I started on a more Ketogenic diet, I am rarely bloated, always regular and have SO much more energy. It definitely works for me!
Collin, I wish you would do another video of being on keto. Like what you eat throughout the day and such. 🙂

I make the crispy cast iron chicken from that blog all the time which is Keto friendly and a family favorite. I love Lina’s variation of using the rotisserie chicken. I have digestive issues as well. I’m on a strict low calorie diet and I exercise everyday. Feeling so much better and no bloating issues anymore. Good luck to all you ladies who are dieting. It can be hard, but the end results are Amazing.

I wonder if the soup was too hot. I was trying to research online what could cause clumping and that seems to be it. I’d try turning heat off then adding milk and cheese. Sorry! Hope that helps…

How much chicken in cups does a rotisserie chicken yield? 2/3? So if I wanted to use chicken breast or something like that instead I would know how much chicken to use. 🙂 thanks for the help!

I made this last night and it was absolutely delicious! Warm, comforting, tangy with a kick of heat and it was perfect. I’ll definitely be making this many times over! Thank you for the great recipe. Do you think if cooked ahead of time this would sit well in the crockpot on “warm” for a few hours?

When freezing this recipe, would you add the cream and then freeze or after you reheat it ?
Oh that’s actually kind of a smart idea – to add it before reheating.
If it does separate a little after freezing you could always mix it up a bit with a hand mixer or something like that.
