Ingredients

  • 12.5 oz can shredded chicken, or shredded rotisserie chicken
  • 1 large ripe avocado
  • 1/2 cup cilantro, chopped
  • 1/2 cup celery, chopped
  • Salt & Pepper to taste

Directions

Add ingredients in a bowl and mash with a fork until well combined.

Need an EASY low carb or Keto lunch idea? 🥑

You should definitely try this simple 4 ingredient Avocado Chicken Salad! We originally featured this idea in 2014, and it has been one of our most popular recipes. It’s interesting too, as this is just a quick idea I came up with on the fly when entertaining last minute guests and had a leftover Rotisserie chicken in the fridge, and ripe avocados on my counter.

Today I’m featuring it again with a suggestion on how to easily make Avocado Chicken Salad a delicious low carb or Keto friendly meal!


Hip Tip: Sometimes I’ll use shredded rotisserie chicken to make this salad or canned chicken from the pantry for convenience. You can definitely season it however you’d like, throw in any additional add-ins that sound yummy, and change up the fresh herbs in case you’re not a fan of cilantro.

Serve this delicious four ingredient salad on Keto Fathead rolls for a creative low carb sandwich idea!

Ingredients

  • 12.5 oz can shredded chicken, or shredded rotisserie chicken

Truly a versatile and easy to customize idea!

There are so many ways to serve this chicken salad according to your dietary needs, such as on a croissant, bread, on top of celery, inside a bell pepper, or as lettuce wraps. You can also add additional add-ins such as walnuts or chopped celery for a crunchy texture.


Here’s a brilliant low carb and Keto approved sandwich idea!

Make a batch of Fathead dough, then divide dough into fourths and roll into balls. Smash them down a little, and bake on a parchment paper covered pan for about 13-15 minutes at 400 degrees. Then just serve as sandwiches! SO good.


These “sandwiches” are SOOOOOO yummy!

My family is avocado obsessed! I love that you can serve this idea in so many different ways and it still tastes delicious! Such a simple and easy meal. Enjoy!

    I would love to eat like this. All the food sounds awesome! But I heard if you are an active person you shouldn’t do this. How do you check ketones?

      They sell pee sticks. But I definitely don’t think this is healthy for an active person. As long as you are eating wholesome foods, not bingeing on sugar or refined crap, and eating veggies/fruits and whole grains in moderation (along with good fats), you should be good.

      So much debate over what is healthy. It’s confusing. Ultimately you just need to eat in moderation what doesn’t inflame your body, what is wholesome and tastes good and will make you feel good and give you energy day to day.

        I want to feel better and I do not have the best diet. I’m just not always sure what I should be eating. What you say makes sense though. Fruits veggies and whole grains. I run a lot so it’s not weight loss it’s more just trying to feel better and I know I’m addicted to sugar.

      If you are worried about having leftovers, it would be easy to just cut recipe in half. I usually plan to not have leftovers with this idea, but if anyone has suggestions let us know! 😀

        To keep your avocado from turning brown, put it in a container with a tight fitting lid and store it upside down in the fridge. It works!

            Lime juice on the avocado prevents browning, works like a charm when we make homemade guacamole. Never browns in the fridge for days.

          I also was told by a friend from Mexico to leave the pit with the remaining avocado and it won’t turn brown.

        I believe your fat count is off. 1 large avocado has about 29g fat, so about 7.25g per serving, not 2.
