Lemon Honey Vinaigrette Salad Dressing

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 teaspoons dijon mustard
  • juice from 1/2 lemon
  • zest from 1/2 a lemon
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Add ingredients to a bowl and use a whisk to blend for about 3 minutes to combine well. You could also use a salad dressing shaker.

Pour over salad as desired, and store leftovers in a jar or shaker in the fridge for up to 3-5 days.

I’ve had a kale salad obsession lately and have been making this dressing often to throw together a quick salad with dinner. My favorite way to serve it is over simple chopped kale greens with red onion, tomato, and parmesan cheese or parmesan crisps on top.

Of course, this lemon salad dressing will pair well with any leafy greens you desire and will stay good in the fridge for about 3-5 days in a jar or salad dressing shaker with lid.

Tips to making a great lemon honey salad dressing:

  • As far as the process goes, I like adding my ingredients to a bowl and whisking it well to emulsify and get things really blended. You could definitely use a salad dressing shaker instead.
  • I have to be honest and say that when I make this dressing I usually just eyeball measurements and taste along the way. It’s highly adaptable to change according to your taste, which is why I love making salad dressings at home.

    The dressing sounds really good. I’ve never made kale salad before (only cooked for greens), but enjoyed it in restaurants. Do you have to massage the kale or use a special variety?

      I think this is curly kale. I buy the prechopped bags as they are inexpensive at my store (frys-Kroger) and your get a lot of it, without having to remove the inner stem.
      Yes you can massage this dressing in it using your hands to soften. I just toss well most of the time.

    I love that shaker too! I also have the larger one with black ring, but the green one gets more use. It’s the perfect size for a batch of salad dressing or sugar syrup for coffee drinks
