Easy Skillet Chicken Fajitas

Make a batch of flavorful Skillet Chicken Fajitas to easily prep ahead healthy and filling meals for the week! Adapted from TasteofHome.com
Ingredients
- 1.5 lbs. Fresh Chicken Breasts, sliced into strips
- 3 Bell Peppers, any color sliced
- 1 Red Onion, sliced
- 3 Tablespoons Olive or Canola Oil, divided
- 1 Tablespoon Lemon juice
- 1.5 Teaspoons Ground Cumin
- 1 teaspoon Garlic Powder
- 1 teaspoon Dried Oregano
- 1/2 teaspoon Chili Powder
- 1/2 teaspoon Paprika
- Salt & Pepper to taste
For the Meal Prep Fajitas Bowls:
- 3 cups brown rice, cooked
- 1 can Black Beans
- 1 can Sweet Corn or Frozen Corn
- Any other additional desired toppings such as cheese, lime, cilantro, etc.
Directions

In a large skillet, saute peppers and onions with 1 1/2 tablespoons of oil until crisp-tender, remove from skillet, and set aside.

In the same skillet, heat remaining oil, and add chicken. Stir in seasonings and lemon juice. Cook over medium-high heat for 5-6 minutes or until no longer pink.

Return pepper mixture to pan and heat through.

Serve inside tortillas and desired toppings such as cheese, tortillas, and sour cream OR see below for an easy meal prep idea.
EASY MEAL PREP IDEA:
Make rice bowls by first preparing 3 cups of brown rice and distributing rice, cooked chicken fajitas, black beans, and corn into food storage containers. Pictured are these entrée sized Glad Food Containers. Store in the fridge for up to 4 days.
On a personal note: This is my favorite way to make fajitas! They are so yummy and flavorful! It’s super quick and simple, plus you can even use sliced beef and sliced chicken for a different variation.

I made something similar for DH this wk for work, except I used quinoa instead of rice (no corn or tortillas either). Its very yummy & filling!

if you are trying to eat mostly organic (so expensive!) there is a great Ibotta offer for Nature Raised grilled chicken breast (they re found in the Publix freezer aisle here in FL, not sure about up north). pricey but Ibotta gives you $2.00 back so brings the price down to around $5. perfect for fajitas, I thaw and then season and use my cast iron fajita pans to sear. there’s enough in the Nature Raised box to feed four people easily. im not a big fan of frozen chicken strips, nuggets, tenders, etc. But I was pretty impressed with Nature Raised. ps: the Ibotta offer is ongoing until March 2019.
