Aren’t easy Crock-Pot recipes the best?!
Any time I can just throw food in the Crock-Pot slow cooker and come home to a yummy homemade meal, it’s a lifesaver! This slow cooker chicken taco recipe is a family favorite! Today I’m showing how easy it is to make shredded chicken in the slow cooker for delicious and flavorful chicken tacos.
Hip Tip: If you’re eating low carb, be sure to check out our Keto Slow Cooker Shredded Chicken Tacos recipe on our sister site Hip2Keto.com! We replace the taco shells with simple and yummy cheese shells.
The keys to great tacos are seasoning & flavor!
Sometimes chicken can be a little bland in the slow cooker if not seasoned with lots of yummy flavors. In this recipe, I’m using a homemade taco seasoning, plus a similar seasoning to a ranch dressing packet.
I’m also using the juice of one lime and one jalapeno seeded and diced. You can add more jalapenos if you like things extra spicy. I felt like one adds flavor without adding lots of heat. This idea is easy to customize, by adding or subtracting any of the spices or ingredients that may not appeal to you.
Once the chicken is tender and cooked, drain some of the liquid and shred it! Lastly, mix in a can of Rotel tomatoes and green chilies – or even your favorite salsa instead! Enjoy this meat in some yummy tacos, burritos, nachos, or taco salad! The possibilities are endless!
Hip Tip: I just received these handy Bear Paws for shredding meat as a Christmas gift, and LOVE them!
Slow Cooker Shredded Chicken Tacos
yield: 8 SERVINGS
This tender and juicy shredded chicken is seasoned to perfection and delicious in tacos, burritos, or taco salads.
- 2 pounds raw chicken breasts
- 3 tablespoons homemade taco seasoning, or store bought packet
- 1 tablespoon minced onion
- 1 tablespoon dried parsley
- 1 teaspoon garlic powder
- 2 teaspoons dried dill weed
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 fresh jalapeno, seeded and diced
- juice from one lime
- 1 cup chicken broth
- 1 can Rotel tomatoes & chilies
- taco shells and toppings for serving, as desired
Place chicken breasts in the slow cooker along with seasonings, chicken broth, jalapeno, and the juice of one lime.
Close slow cooker lid, and cook on LOW for 3-4 hours or HIGH for 2-3 hours.
Remove chicken, shred, and remove most of the liquid. Return chicken to slow cooker. Stir in can of Rotel, drained. Serve shredded chicken in tacos as desired. Note: This made about 5 cups of shredded chicken mixture.
Yummy chicken tacos!
Of course, you can just dish up tacos straight from your slow cooker, however, I took an added step and made some yummy baked tacos in the oven using my slow cooker shredded chicken! It’s an easy way to make tacos for a crowd!
Hip Tip: You can prep a tray of tacos ahead of time for a game day and stick in the oven just before game time, as an easy and satisfying football watching food!
I assembled each taco in a Stand n Stuff Taco Shell with a layer of refried beans, warm shredded chicken, and cheese. I melted them all in the oven at 365 degrees for about 10-15 minutes, then just topped with fresh cilantro and tomato to serve! Yum!
Make this delicious Slow Cooker Enchilada Soup
The ingredients list does not show chicken broth – what is the correct amount?
1 cup – thanks updating!
This looks scrumptious Lina. Don’t have a slow cooker. Can you suggest how long to cook on stove with a low setting? I’ve got a “flame tamer” so think it would work.
THANKS Bunny – ya you can try on the stove, bring ingredients to a boil and then let simmer until it’ll shred…the internet says about 20 minutes. Hope that helps! 🙂
Thanks Lina for the instructions. Will definitely make this weekend! Can’t wait to try it 🙂
I <3 slow cooker and Instant Pot tacos! I make a yummy 3 ingredient version using Penzey's Taco seasoning, chicken breasts, and this awesome, locally-made Texas salsa! I serve w/ shredded cabbage, lime wedges, and avocado crema!
YUMMY! That sounds great!
Wonder how it would taste without the rotel. My brothers won’t and can’t eat tomatoes.
Maybe just omit or sub in your favorite taco sauce or salsa 🙂
Has anyone else tried shredding chicken with a mixer? I personally think it’s a game changer, especially if you have a large amount to shred. I make a huge bowl of chicken salad to take on vacation and I can get it shredded in less than a minute. This recipe sounds delicious!
I use my kitchen aid lol
great idea! Thanks for sharing Jennifer!
Yup. I do it with beef too, for pulled/shredded beef sandwiches!
I am craving chicken tacos lol but I don’t own a slow cooker any good deals out there?
I get my kitchen appliances whenever H2S posts that Kohls is doing rebates. I have: slow cooker, mini slow cooker, toaster, blender, hand mixer, toaster oven, etc. Best deals at that time. Great gifts too. Good luck.
I’m so going to make this for my family on game day! Thanks Lina I have been stressing what to make that will please all my picky eaters, taco’s is something they will eat! Looks amazing, Thanks Lina – keep your recipes coming, everything you make is delish!!!!!!!!!!!!
Cuban sliders on Kings Hawaiian rolls are always a crowd pleaser!
Yum great idea!
Oh YAY Thanks for the nice compliment Barb!! 🙂 Enjoy!
Sounds yummy. I bet i could convert this recipie to an Insta-pot.
We do slow cooker chicken tortilla soup that’s a winner over here
Oh that sounds yummy!😋
Easier recipe would be to use a jar of salsa, a package of taco seasoning and chicken breast
Yep, sounds good! 🙂 Thanks for sharing!
Yes it would be easier. I appreicate that Lina gave a list that didn’t include any pre-made seasonings though. Too often when I look for easy homemade meal recipes they include a list of canned souped and spice packets. Since I have to avoid MSG it means I can’t use the recipe or I have to find more recipes to break down the components.
Starting with it broken down and letting people choose to use packets seems like a way to please everybody.
My husband and I are older and on heart healthy diets. We appreciate the home made recipe as convenience packets are a no no on a low salt diet. But I sure used them when I was young and busy with young children.
