White Bean Chicken Chili Recipe

White Chili with Chicken

yield: 6 SERVINGS

cook time: 30 MINUTES

total time: 45 MINUTES

Ingredients

  • about 4 cups cooked & shredded chicken
  • 3 15.5 oz cans of Great Northern Beans
  • 1 14.5 oz can chicken broth
  • 1 med. onion, chopped
  • 1 tsp. garlic
  • 1 small can of diced chilies
  • handful of chopped cilantro
  • 1 jalapeno, chopped and seeded (optional)
  • 1 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 tsp clove
  • 1/4 tsp red pepper
  • 2 tsp cumin

Directions

Combine everything in a large pot and simmer for 30-45 minutes on low.

Optional Slow Cooker Directions: 

Place ingredients in a slow cooker and cook on low for 3-4 hours.

There’s nothing better than a warm bowl of chili on a cold winter day!

This easy recipe is super comforting and yummy and was passed on to me by my sister in law about 4 years ago – it quickly became a family favorite! You can use leftover rotisserie chicken or grilled chicken works too.

The broth gets so tasty on this soup once cooked!

The combination of clove, cumin, garlic, and oregano gives it amazing flavor! Depending on how spicy you prefer things, add a jalapeño and green chilies 🙂

This makes your home smell amazing and tastes so GOOD. I love traditional chili, but this white bean version is a fun change of pace, and so simple to make. It’s wonderful as is, and sometimes we garnish with sour cream and tortilla chips. Enjoy!

    Also they have a White Chili Chicken seasoning packets like chili packets in stores & is much faster & easier. js

      Many packet mixes contain MSG. Plus they can be full of additives, preservatives & silicon dioxides. Ditch the convenience and take a few minutes extra to measure out ingredients for a healthier meal.

      I was just thinking that too! So many soups have “cream of” something in it! Love that this is all real ingredients instead of lots of processed foods! Will definitely be cooking this!

      That’s exactly what I thought! My son can’t have dairy, egg, soy, peanut and many more foods so adapting recipes can be somewhat challenging. I believe he could have this without issue. I will definitely be taking note of this. Thank you Lina!!

    I make a version of this that calls for a little flour to thicken it up at first. I have to say it is pretty darn good! I feel like it is a great cold buster this time of year!

    So glad I checked this before I went grocery shopping today! I picked up what I needed and made this for dinner. So delicious!! I’ve always made chili with ground beef so my kids were looking at it funny. LOL! They loved it though!! Thanks for posting Collin!

    Not thrilled about the use of canned beans because of the sodium. 1 15-ounce can of beans equals 1/2 cup dry beans, before cooking, so I will substitute 1 1/2 cups dry beans and make this in my slow cooker.

    Sounds delicious.

    Great recipe. Use a similar one. Omit jalepeno. Add add to crockpot plus 1 block of pepperjack. Super good. Don’t drain juices from bean…use all.

    I’ve made this recipe for years. I add about a 1/4 cup of fresh lime juice after it’s cooked which adds a whole new dimension to it.
