Try these delicious creamy White Chicken Enchiladas with a flavorful green chile & sour cream sauce! I’ve used a prepared rotisserie chicken for convenience, but feel free to use leftover chopped chicken instead. This recipe comes together easily and was a big hit with my family!

- 3 cups shredded chicken (I used a rotisserie chicken.)
- 1 cup pepper jack cheese, shredded (divided)
- 2 cups Mexican blend cheese, shredded (divided)
- 2 teaspoons ground cumin
- 8 medium flour tortillas
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 cup canned green chile salsa (or small can green chilies)
- 3 green onions, chopped
These enchiladas are so good! They were gobbled up immediately!
What a fantastic homemade meal. I LOVED the added flavor of seasoning the chicken and also using pepper jack cheese. If your family doesn’t enjoy spicy at all, then just omit that type of cheese and use all Mexican blend cheese.
