2 Ingredient Pineapple Whip

yield: 4 SERVINGS

Ingredients

  • 1 whole pineapple – cut up and frozen overnight
  • 1 cup of coconut milk (or milk of choice)

Directions

1

Place frozen chunks of pineapple and coconut milk into a food processor or high powered blender.

Turn on food processor and blend until the consistency becomes creamy.

You may have to stop several times and scoop down the pineapple.

If desired, put mixture in a plastic bag with the end cut off and put in ice cream cups. Makes about 3-4 servings.

    I am joining this discussion way late in the game but just to add that Coconut milk is much better that any dairy milk many weight trainers recommend it…just saying

      I was thinking of an alternative to coconut milk (allergies.) IDK which would taste better vanilla soy or almond. Oh the choices!

        Soy is an endocrine disruptor and is more than likely genetically modified ( which presents a host of other issues). If you want to go healthier, never use soy anything unless they soy has been fermented.

          VERY interesting things to consider. I can’t do coconut milk. Just not worth it. When I make this (there will be a time), I should try an almond milk. It sounds safest so far. I never tried lactaid

            Just be sure to check the contents of the almond milk you choose. My daughter bought some without checking contents & later discovered there was coconut in it! My son-in-law had a reaction because he’s allergic to coconut, which is the only reason she found out there was coconut in some almond milk. I’m not sure which brand it was…

    Real Pineapple Whip is from Arkansas and made without any milk like products but good luck getting the recipe from any of the vendors! Lol! This is an awesome alternative! 🙂

      I had it last year in Hawaii on the Dole Pineapple plantation and was told it originated on the pineapple plantations? Who knows! But it’s yum. Going to try this.

      Canned coconut milk is very creamy- carton coconut milk is very watery- depends on what you prefer ( personally I would prefer creamy, but that’s me)

    Do you need to serve this right away? If you whip it up ahead of time (say a couple of hours), will it begin to get watery from the frozen pineapple “thawing”?

      3-4 cups of frozen pineapple chunks would work! I would look at the back of bag to see how much a serving size is and how many servings per bag to verify the exact size to buy. Hope that helps!
