English Muffin Caprese Pizzas

Ingredients

  • 2 English muffins
  • 4 slices fresh mozzarella cheese
  • handful of small salad tomatoes, sliced
  • 4 fresh basil leaves, sliced
  • drizzle of olive oil
  • drizzle of balsamic vinegar
  • finish with salt/pepper and ground red pepper flakes if desired

Directions

Preheat the oven to 375 degrees.

Open English muffins and place on top of a baking sheet.

Top with cheese, tomatoes, and basil. Drizzle with a small amount of olive oil and balsamic vinegar. Bake in the conventional oven or toaster oven at 375 degrees for about 10 minutes or until slightly brown.

Top with a little salt, pepper, and red pepper flakes if desired. (Serves two)

English muffins are a great foundation for an easy pizza. I love that English muffins can easily be frozen to always have on hand! Use different varieties of leftover cheese, sauces, meats, and veggies from the fridge for a super easy and delicious meal or snack.

This Caprese version of English muffin pizza is just like the popular salad, except melted to perfection into the form of a tiny pizza. YUM!

Add toppings to English muffins smothered with melted mozzerella for a delicious Caprese pizza!

These are so good! I’ve also made a whole pizza this way and it’s fantastic. I think sun-dried tomatoes and olives would be yummy too. I love easy no-fuss meals like this and hope you do too!

    Yum I need to try this. Your holiday ham sandwich recipe was awesome. I have been making tuna melts for years this way by mixing tuna with mayo, pickle, and red onion chopped up and putting it on the muffins with some melted cheese on top and I often add seasoning like garlic powder or the Trader Joe’s seasoning as well. Too yummy!

    We love these when we go camping! I love also using naan bread for pizzas you can get super cheap at Aldi. It is also very delicious with sliced apple, arugula (lightly tossed in a little olive oil-honey-and dijon mustard),and goat cheese.

    Yummy! I make english muffin pizzas and use tomatoe paste (season a bit) and cheese. The kids like to make faces with the toppings. So much fun. They are really yummy cold and great for the kids school lunches or snack.

      Even though I don’t much care for peanut butter, the Planter’s Nut-rition peanut butter was amazing! (We tried the one with the granola and raisins and cinnamon in it when they first came out and were free with RR @Walgreens, but it’s a smaller jar and higher price–not particularly affordable–so I tried to recreate it at home.)

    I bake my English muffin pizzas in the toaster oven. Why heat up the entire oven, when the toaster oven is warm and ready in minutes?!?! My second batch usually only needs 5 minutes to warm and melt the cheese.
    I usually use spaghetti sauce to make my “pizza-bread” because there’s usually an open jar in the fridge and it’s already well seasoned! My kids LOVE “pizza bread” so much they’ll eat 2-3 times as much for lunch when it’s on the menu (as compared with a regular sandwich).
