Tomato Basil Soup

Ingredients

  • 2 cloves minced garlic
  • 1/2 chopped yellow onion
  • 1 tablespoon olive oil
  • 2 – 28oz. cans crushed tomatoes
  • 1 can – 14oz. chicken or vegetable broth
  • 15 leaves of fresh basil, chopped
  • 2 teaspoons sugar (more or less depending on acidity of tomatoes)
  • 3/4 cups whipping cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup butter
  • optional: Grated parmesan cheese for garnish

Directions

In a large pot on the stove, brown onion and garlic in olive oil for a few minutes until translucent.

Add canned tomatoes and broth. Bring to a boil and let simmer for ten minutes.

Add basil and sugar and reduce heat to low. Add one teaspoon sugar and taste to see if mixture needs more sugar.

Stir in cream and butter. Cook until butter is melted. Add salt & pepper, and garnish with Parmesan cheese if desired.

    I’ve got a cold and wanted something warm and yummy and this was warm and YUMMY!! Even my 10 year old who is anti-tomato soup decided to give this a try and dipped his grilled cheese like it was going out of style! I didn’t have crushed tomatoes but did have 1/2 a box of tomato sauce and a jar and a half of spaghetti sauce (which I blended to get rid of chunks) but it worked just fine. I will never buy my tomato basil soup from *afeway again!! Thank you for (all) the delicious recipie(s) Lina and Collin:) And I fed 6 for under $10 to top it all off!! Bonus:)

    I sent this recipe to my aunt in Chicago. Hopefully they have the ingredients. I don’t think anyone will go out to the grocery store as it is already 5 degrees there right now. It’ll be perfect for their weather, minus 20 tonight with wind chill factor of -40, yikes!
