Tomato Basil Soup
yield: 9 SERVINGS
prep time: 10 MINUTES
cook time: 10 MINUTES
total time: 20 MINUTES
Make this tomato basil soup with a few ingredients for a rainy day!
- 2 cloves minced garlic
- 1/2 chopped yellow onion
- 1 tablespoon olive oil
- 2 – 28oz. cans crushed tomatoes
- 1 can – 14oz. chicken or vegetable broth
- 15 leaves of fresh basil, chopped
- 2 teaspoons sugar (more or less depending on acidity of tomatoes)
- 3/4 cups whipping cream
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup butter
- optional: Grated parmesan cheese for garnish
In a large pot on the stove, brown onion and garlic in olive oil for a few minutes until translucent.
Add canned tomatoes and broth. Bring to a boil and let simmer for ten minutes.
Add basil and sugar and reduce heat to low. Add one teaspoon sugar and taste to see if mixture needs more sugar.
Stir in cream and butter. Cook until butter is melted. Add salt & pepper, and garnish with Parmesan cheese if desired.
If you whip up a batch of this soup, keep it warm in a slow cooker until dinner. My kids love dipping grilled cheese sandwiches into tomato soup, and they really enjoyed this version!
I hope your kids like to dip in tomato soup not soap. Lol
Oh my yes and thanks.!!
That recipe sounds great. That’s what I’m making for dinner tomorrow. Thanks
Sounds good! Thanks for sharing 🙂
This was one of my favorite things to eat when I was little yummy!!!! 🙂

Thank you so much for posting this! I’ve been craving it and have wanted a quick and easy recipe for this soup.
Oh good! You’re welcome!
I have to try this, Lina. I love your copycat Panera broccoli cheddar soup. I’m sure this soup is just as good. Thanks!
Oh thanks, that’s a great soup too! 🙂
Where can I find that recipe?
I make this same soup, but add a little crumbled sausage and tortellini’s.. Great recipe
Oh yum! Great idea.
Can’t wait to make this when my basil plant is blooming again! I have a new found taste for soups, would love to see more Lina, thank you!
You’re welcome, thanks for stopping by today!
Lina, any ideas on making this whole30 compliant!? I would love to try this!
Coconut milk! I haven’t used it tomato soup but I bet it’s good. This recipe looks similar.
Oh I hadn’t thought of coconut milk!!! Yum!!! Thanks!!
Yay! Thanks! I was about to ask how to make this vegan, but this recipe looks good. Can’t wait to try it!
Thanks for a wonderful recipe. Am gonna try this with fresh tomatoes..
If you don’t have fresh basil could you use dried basil and any idea how much you would use?
I’ve got a cold and wanted something warm and yummy and this was warm and YUMMY!! Even my 10 year old who is anti-tomato soup decided to give this a try and dipped his grilled cheese like it was going out of style! I didn’t have crushed tomatoes but did have 1/2 a box of tomato sauce and a jar and a half of spaghetti sauce (which I blended to get rid of chunks) but it worked just fine. I will never buy my tomato basil soup from *afeway again!! Thank you for (all) the delicious recipie(s) Lina and Collin:) And I fed 6 for under $10 to top it all off!! Bonus:)
Oh great news, thanks!
Linda, YUM! I make a similar soup, but just add all my ingredients to my blender, then cook. So, so easy!
I made this soup a couple of times, and it is delicious. Thanks, Lina!!
Awesome! You’re welcome 🙂
Could you freeze this soup
Can you make a recipe section?
Here’s our recipe section- you can filter on the top right by meal type. Hope that helps!
Is the basil overpowering? Just trying to decide if I should leave it out so my kids eat it. They love regular tomato soup with no basil.
We didn’t think so but you can dial it back if concerned 👍
Is there any way I could use fresh tomatoes in this recipe to get a similar taste?
Sure I found this recipe if it helps https://www.geniuskitchen.com/amp/recipe/oven-roasted-tomato-sauce-209601

Wow!! That is so great- thanks so much 👌
This is also Keto friendly. Thanks for sharing

Yes stay warm! Enjoy 😉
I sent this recipe to my aunt in Chicago. Hopefully they have the ingredients. I don’t think anyone will go out to the grocery store as it is already 5 degrees there right now. It’ll be perfect for their weather, minus 20 tonight with wind chill factor of -40, yikes!
Oh thanks for sharing our recipe!
Just made it, so delicious. Thank you!
I’m so glad Ann! Thanks! 🙂
