Maple Bacon Pancake Bites

Ingredients

Pancake Batter:

  • 2 cups pancake mix (Bisquick)
  • 1 cup milk
  • 2 eggs

For Frosting:

  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup real maple syrup

Topping:

  • 1lb. bacon, cooked and finely chopped

Directions

Preheat the oven to 400 degrees.

Combine pancake batter ingredients.

Pour into two GREASED mini muffin pans, filling each cup about 2/3 of the way. Bake at 400 degrees for about 9-10 minutes until golden. Place muffins on a cooling rack.

Cook and chop bacon and set aside in a bowl.

In another bowl, mix together cream cheese, powdered sugar, and maple syrup.

Dip each muffin in frosting and chopped bacon. Drizzle with extra maple syrup before serving.

      I’ve gotten great prices at Target & Whole Foods. Keep in mind, it will still be pricey ($10+), but it’s worth it!!!

      Google maple syrup producers for your area, visit a farmers market for larger amounts like gallon, half gallon and quarts. Walmart and other grocery stores carry small bottles but it’s usually the darker syrup and the most desired sweetest maple syrup is light in color.

      Seriously? Don’t pay money for syrup! Making it is the easiest thing ever! If you can boil water, you can boil sap. You can freeze or can it when it’s done, and it will make your kitchen smell amazing.

        do you suggest i use the sap of the Palo Verde or the Mesquite trees? because that’s what they have where i live. how do i get enough sap from the tree to boil down? do you promise it won’t be disgusting?

    Personally I would say Costco is a strong contender if that is an option for you. They have a big jug of organic maple syrup for 10$!

    Is the bisquick regular bisquick or the pancake mix that states “only need to add water”?

      Hi Leslie – I used jus regular Bisquick. The original recipe (linked below title of recipe has a from scratch recipe that I’m sure is great too! Or use your fav pancake recipe 🙂 thanks!
