If you like bacon and you like pancakes, try combining these two yummy foods into these great tasting Maple Bacon Pancake Bites. Just place the ingredients in a mini muffin tin and the result is like little clouds of salty and sweet heaven!
Maple Bacon Pancake Bites
Adapted from Vixen’s Kitchen
2 cups pancake mix (Bisquick)
1 cup milk
1/2 cup cream cheese, softened
1/2 cup powdered sugar
1/4 cup real maple syrup
1lb. bacon, cooked and finely chopped
Directions: Combine pancake batter ingredients and pour into two GREASED mini muffin pans, filling each cup about 2/3 of the way. Bake at 400 degrees for about 9-10 minutes until golden. Place muffins on a cooling rack. Cook and chop bacon and set aside in a bowl. In another bowl, mix together cream cheese, powdered sugar, and maple syrup. Dip each muffin in frosting and chopped bacon. Drizzle with extra maple syrup before serving.
Notes: I used pancake mix, but you could substitute your favorite homemade recipe. If you prefer full sized muffins, adjust cooking time as needed. These muffins still taste great the next day!
