Easy Sausage and Veggie Tin Foil Dinner for Grilling or Camping

Sausage & Veggies Foil Packets

Ingredients

  • 12 oz. package of smoked sausage
  • 2 bell peppers
  • 1 zucchini
  • 1/2 purple onion
  • 3 medium Yukon gold potatoes
  • 2 ears of corn
  • 4 tablespoons of olive oil
  • Spices: 1/2 teaspoon garlic powder, 1 teaspoon paprika, 1 teaspoon oregano ,1/4 teaspoon red pepper flakes, Salt & Pepper to taste

Directions

Chop veggies and sausage into bite size pieces, and the corn into thirds or quarters.

In a large bowl toss all with olive oil and spices.

Assemble packets by first stacking two pieces of tin foil, adding sausage & veggies on top, and sealing it with a top layer of foil, pressing the edges together.

Grill over medium heat for about 16-20 minutes until veggies are crisp tender.

Remove from grill and serve.

Try these delicious Sausage & Veggie Foil Packets for an excellent backyard grilling or camping meal idea. They have a wonderful texture and flavor, plus there are no dishes to do afterward!


Grilled veggies are my favorite, and this idea doesn’t disappoint. 

It’s worth noting how easy it’d be to customize and swap out different veggies or spices to suit your family’s taste. Vegetarians can even skip the sausage for a tasty grilled veggie dinner idea!

Hip Tips

  • When building my foil packets, I actually lined my foil with a piece of parchment paper then spooned food on top of it because I dislike when food sticks to foil. (Just personal preference and optional.)
  • This amount of food made about 5 packets.
  • Want to keep this lower-carb? Use slightly less carby veggies like mushrooms, zucchini, bell peppers, and onion.

I LOVED these Sausage & Veggie Foil packets!

This meal was a hit with my family, and I can definitely see us making it again while camping or tailgating. It’d be an easy meal to prep ahead at home by cutting all the ingredients and storing it in a large freezer bag, then compiling while at camp. So easy & delicious!

    We have made a different version for years while camping. A hamburger patty, carrots, potatoes,zucchini and onions.

    We do this with ground beef & everyone in our family loves it! We’ll have to try the sausage version. I never thought about parchment paper but we use a little bit of cooking spray to prevent sticking.

      How do u make it with ground beef? What do u put in it with the meat?

        We do potatoes, broccoli, zucchini & peppers all mixed among the ground beef but you can use whatever veggies you want. Sometimes we also add shredded cheese just before serving.

      We do the “hobo packs” with ground beef too but I form them into Salisbury Steaks with a little Worcestershire sauce.

    We do this with hamburger patties, carrots, potatoes & onions. We call them Hobo dinners. If you put an ice cube in the packet also, it helps to steam everything & prevent sticking.

      Yes for sure! 375 for maybe 20-25 minutes or so.

    Just FYI,cooking and grilling in aluminum foil is quite dangerous for health.

      Depends on how often you’re doing it. If you really do the research, you’ll see that excess aluminum in the body is a potential health concern; however, the human body is capable of removing aluminum from the body. Just don’t cook with aluminum foil every day and you’ll probably be fine.

    I was first introduced to foil packs when I was a Girl Scout counselor just out of HS. At the time, they were called Hobo Packs. While on a recent camping trip, our family made these with hamburger meat, potato and veggies. Delish! I make the sausage version in the oven for breakfast too!

    I want to mention a kind friend here. They have a garden and grow zucchini, squash, tomatoes & peppers. So they bundled up several of the fresh veggies, box of foil and a package of chicken breast along with an adorable handmade card. It made me feel special and she assured me that she was happy to do it, as she always had so many veggies this time of year. I just thought of her, reading this recipe. Foil packets are delicious and great with all types of meats depending on budget and preference. 💞
