Baked Ham and Cheese Cups

yield: 12 SERVINGS

Ingredients

  • 10 large eggs
  • 12 slices of deli ham
  • 1/2 cup cheddar cheese, shredded
  • 1 and 1/2 cups diced veggies (I used bell peppers, red onion, and green onion)
  • nonstick spray for muffin tin

Directions

Spray muffin tin with nonstick spray. Place a piece of ham in bottom of each cup.

Add a little shredded cheese to each cup. Whisk eggs together and pour into each cup.

Chop and saute veggies for a few minutes with a small amount of olive oil and add salt & pepper to taste.

Add a little of the veggies to the top of each cup.

Bake at 400 degrees for about 15 minutes until eggs are set. Makes 12 individual sized cups

    How many would be considered a serving?

      I would assume two, as that would be two eggs and some meat and veggies, the standard. But if you are working out a lot, maybe three.

    Thank you Lina! Sometimes I never know how much deli ham to get at the store. Some wks, the kids like to take sandwiches to school for lunch and it’s used up. Then this wk, I buy the ham and they want to eat the hot lunch, and I’m stuck with like 1/2 lb ham (Which I freeze in rolls for omelets, super easy to pull a roll out and dice up!) Dinner dilemma solved!

        just wanted to come back and say these were a HIT! Rooting through the freezer, I found a half bag of seasoning blend, so I grabbed that to use and as I was sauteing I groaned. I forgot it had celery in it LOL! Nobody complained (honestly, I couldn’t even taste the celery, as the onions & peppers stood out the most). I love how the eggs puffed up in the oven.

    I had to make these right away they looked so good! Sadly I didn’t have vegetables to saute on hand but I did have spinach to put in them and they still turned out delicious. Took me almost no time to make. I really like how they’re like mini quiche but without the carbs from a pastry crust.

    I make these a lot, they’re always a hit. I mix salsa in, gives them a great flavor. A lot of times I’ll use a carton of egg whites in addition to whole eggs. These do freeze well and they make a great after workout snack!

      Thanks, I was wondering if they froze good. My son requested this for breakfast during the wk and I’m like no way not every day LOL. But I can make a batch tomorrow to freeze and pop out as needed!

    I have also made these in mini muffin form with canadian bacon–love flash-freezing and reheating. Also on a different note, I must tell you I got an instant pot for Christmas (after notifying hubby of a H2S-posted deal on one) and the first recipe I tried was your 30 min. ribs. Yummy! Gave me confidence to try other recipes and love my InstantPot. Please keep up the posts!!

    These were a huge hit for breakfast this morning! I had mushrooms, onions and tomatoes on hand so I diced them up and tossed them on top, and topped with chives (needed to use them) and they turned out so delicious with tons of flavor! I halved the recipe but wish I hadn’t as there are none left over for tomorrow. Thank you for posting – this recipe is a keeper!
