Hmm. I wonder if this is the missing ingredient when make banana bread? It never seems to have as strong of a banana flavor as I would like.
Yes. I have that problem too. But ive learned the hard way that you cant add more banana or it doesnt cook right. Wet and raw 🤢. Curious now if that could be added. N
wait until your bananas are brown on the skin and soft in spots, it’s okay if they’re a little gooey in spots. That means the banana has broken down into sugars and it is extra sweet and flavorful. (the texture is weird so no one wants to eat it then, but they are perfect for recipes and to freeze and blend for “ice cream”!
America’s Test Kitchen has a recipe that calls for 5-6 ripe bananas–microwaved in a covered bowl for 5 minutes before mashing through a stainer to liquefy. Then, reduce it over a stove to intensify banana flavor. Add reduced banana liquid (let it cool a bit) to all other liquids before mixing with dry ingredients. It is extra steps, but so very yummy! They also top the bread with sliced banana & sprinkled sugar to caramelize while baking.

Banana bread comes out better and more flavorful when banana is very ripe.
