Try this easy avocado chicken salad for a healthy and flavorful alternative to traditional chicken salad! It’s so simple to make.

Costco rotisserie chicken for the win!

The idea for this recipe occurred to me one day when I had surprise guests over and wanted to make a quick lunch. All I had in the fridge was a Costco rotisserie chicken and some ripe avocados on the counter. I managed to find some cilantro and then put together these quick and simple chicken salad sandwiches!

The sandwiches were SO TASTY, and I think everyone was surprised to hear this chicken salad had just three main ingredients.

So today, I’m excited to share this delicious idea with you as a simple and delicious meal to make for your family.

Hip tips for making this 3-ingredient Avocado Chicken Salad:

  • The secret for selecting the perfectly ripe avocado is that it will yield to firm gentle pressure when squeezed. If it feels super mushy to the touch, then it’s over-ripe.
  • If you’re worried about the avocado browning, you could try mixing some fresh lime juice into your avocado chicken salad. Lime fits perfectly with the flavor profile of the other ingredients in this recipe, and its citric acid will help to slow the browning of the avocado.

Low Carb Avocado Chicken Salad

This is seriously so EASY to throw together and so versatile!

Chicken salad is definitely a favorite of mine! I love that this recipe offers a basic foundation. You can prepare it as is or change it up a bit by adding red onion or walnuts for a crunchy texture, a few tablespoons of Greek yogurt for added creaminess, or additional seasoning like cumin garlic powder. What do you like in your chicken salad?

We had rot. chicken last night so I had leftovers – will try this. Hubby is super picky so it might work. Neither of us like mustard, mayo or ketchup (condiments) so this is PERFECT !!!

  17. starkissed01

Yum! Thank you for posting this. I can’t wait to try this!!

  18. Stacy

I love to add sliced or slivered almonds to chicken or tuna salad. A friend of mine actually told me about using avocado with tuna salad and it is really good that way as well. Also suggested was a bit of olive oil and a flavored vinegar (I like garlic or red wine vinegar) mixed in.

  19. Nic

Using avocado for egg salad is also very tasty. A great alternative to all that may!

  20. angela

Another mixture of ingredients for chicken salad I like is red grapes, sliced almonds, and red onion. Sounds weird but is very good.

  21. Lolita

    Looks yummy, thanks Lina!

  22. Blanca

Try adding sliced grapes, also very yummy😉

  23. Blanca

Oops just read Angela’s post. Great minds think alike.

  24. Christine

Looks delish! I wanted to add that if you have a GFS nearby, the Sienna Bakery brand croissants are fabulous. Perfectly flaky!

  25. Van

    Mmmmmm, making my mouth water!!

  26. Donna

Love this recipe……easy, healthy and looks delicious!! Lina, love your great ideas!!

  27. Kristina

this is amazing. I make it all the time, but I definitely put some chopped red onion in and squeeze lime juice on top. I eat sandwiches or use Tortilla chips to scoop it up. Everyone loves it!

  28. Misty Nicole Roberts

No mayonnaise or onions (as I’m allergic), you are my hero, Lina!

  29. Lizz

I just made this for lunch and it was delicious! I used some plain Greek yogurt as a spread instead of mayo or dressing. Then added some banana pepper slices for crunch. As a side dish I chopped a mango and mixed it with a can of Del Monte zesty green chile diced tomatoes to make a great “home made” salsa.

    • Lina (Hip's Modern Martha)

Wow! That’s awesome Lizz! Thanks for sharing 🙂

  30. Charmagne Clements

I also love to add pineapple to my chicken recipes. It makes them so fresh & crisp, especially when served cold!!! Thanks for the great récipe!

      Great news! You’re welcome 🙂

  32. Catie

This would be great in a tortilla too!

  33. Alese

I make this at least once a week. So yummy! I always add some fresh lime juice too. It tastes amazing & keeps the avocado from turning brown!

  34. Jenna

I liked it, but I feel like it needs flavor. I think what we are going to do next time is to prepare it like a guacamole-lime/lemon juice and onions.

  35. Jenna

Nevertheless, it was wonderful. Thank you!

  36. Ton Ton Kinlaw

I love this and I added like always dried cranberry’s and chopped cucumber with oliveoil mayonnaise.

  42. Coral

I like the basic concept, but I must admit…it was a bit bland. I will add something else to give it some extra flavor next time.

  43. Stephanie

Are these sandwiches supposed to be served cold?
Also do they save well or will the avocado turn brown?

  44. Leighton

Still loving this…..thanks again for posting!

  45. Charity21luv

I can’t wait to do this! I love the idea of replacing mayo with something so healthy as avocado. Brilliant.

  47. Christy

Oh my is this great! I didn’t have cilantro and I wish I did because I love it, but I threw in scallions garlic powder and Greek yogurt. We had it on whole wheat wraps and I made sweet potato fries. Excellent! Kid friendly too! 😊
