Banana Crumb Muffins Recipe:

Ingredients

For the Muffins:

  • 1 and 1/2 cups All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 cup butter, melted
  • 1 egg
  • 3/4 cup white Sugar
  • 3 ripe bananas, mashed

For the Crumb Topping:

  • 1/3 cup packed brown sugar
  • 2 Tablespoons flour
  • 1/8 teaspoon ground cinnamon
  • 1 Tablespoon butter

Directions

Preheat oven to 375 degrees.

Grease muffin pan, or use muffin liners. I used ten 5-inch square pieces of parchment paper. If you do this as well, it does help to spray a little non-stick spray in the pan and then firmly place the parchment paper in each muffin slot.

Mix together flour, baking soda, baking powder, and salt.

In a separate bowl, mash bananas and add sugar, butter, and egg.

Combine this with the flour mixture and stir until just combined. Spoon into muffin pan.

For the crumb topping: In a small bowl, mix together brown sugar, flour, and cinnamon. Add butter. Sprinkle crumb topping on top of the muffins.

Bake at 375 for 18-20 minutes. Insert a toothpick and they are done if the toothpick comes out clean. Makes 10 muffins

    I have made these, actually had one this morning and the recipe is fantastic! If you go to the allrecipes website there a few alterations that can be made that really bump up the flavor!

    Looks yummo…. Can we substitute oil for butter in this? If so how much? I make banana bread with oil no butter and we love it!!!

      I make a vegan banana muffin with oil and I add 1/3 cup of oil for 1.5 cups of flour. HTH

    This is one of my favorite recipes. I substitute apple sauce for half of the melted butter and I can’t tell the difference.

    Okay, what am I doing wrong? My crumb top doesn’t look anything like yours. In fact it just looks like the topping melted into the muffin, no crumbly look at all! This happens every time I make homemade crumb topping!

      Hmm wondering what temp was your butter? Cold yet a little soft is what I did. Did it look crumbly before you cooked them?

        Yes, it looked just like the picture. I took the butter out while I did everything else like you had suggested. You can’t even tell that I put a topping on it.
