- More cheese please! cream cheese and shredded cheese make this soup an epic comfort food situation! If you’d like to experiment with other favorite cheeses, I think that’d be fun too.

- Leftover shredded chicken or perhaps a rotisserie chicken is great to use for this idea. You can use egg noodles or any noodles, but we really enjoyed using thin spaghetti. So delicious!

- You can, of course, use broth, but in a pinch sub in water and bouillon. I enjoy Better Than Bouillon as I think it tastes yummier than traditional bouillon cubes!

Cheesy Chicken Noodle Soup

Cream cheese and cheddar are added to traditional chicken noodles for the ultimate comfort food.
Ingredients
- 1 tablespoon olive oil
- 3/4 cup chopped carrots
- 3/4 cup chopped celery
- 1/2 cup chopped yellow onion
- 3 cups cooked and shredded chicken
- 10.5 oz can cream of chicken soup
- 0.6 oz. zesty Italian dressing packet
- 1/2 cup cream cheese, softened
- 6 cups chicken broth (or 6 cups water & bouillon)
- 1 cup milk
- 8 oz. dry thin spaghetti noodles
- 2 cups sharp cheddar cheese, shredded
- Optional Topping: 4 pieces of cooked bacon, crumbled
Directions

Heat up a dutch oven or soup pot over medium heat. Add olive oil, and sauté onion, celery, and carrots until the onion is fragrant and translucent.

Reduce heat and add chicken, cream of chicken soup, seasoning packet, cream cheese, broth, and milk. Whisk entire mixture together until smooth.

Turn temperature back up to medium and let soup simmer for about 20 minutes until carrots are tender.

Add spaghetti noodles and shredded cheese, and simmer until noodles are cooked and the soup thickens, about 15 minutes. (Note: I was concerned the soup wasn't thickening, but let the noodles soak, and it will thicken.)

Serve soup warm with crumbled bacon as a topping.

LOVE the ‘Better Than Bouillon Vegetable’! As a vegetarian I use it as a base for any dried beans and soups I make. It makes LOTS of recipes more easily adjusted when switching out vegetables or Morningstar veggie products for meats!

I feel like you could potentially place ingredients in the slow cooker on low for 3-4 hours and throw in noodles the last 30-45 minutes. I have not tested it that way though.
I agree with Lina, but I would save the milk and cheeses for the last half hour and cook the noodles separately and then add them at the end. Noodles always get mushy on me when I put them in the crockpot too early. Also, instead of shredded chicken, I would just put in boneless, skinless thighs (or breasts) and shred them at the end.
