Prefer making soup in the Instant Pot Pressure Cooker? Instant Pot Directions:
Set Instant Pot to “Saute” mode. Brown ground beef with onion and garlic. De-glaze pan with broth. Add the remaining ingredients. Close lid and set cook time for 5 minutes on ‘Soup” mode. Let pressure naturally release for 5 minutes. Stir well and serve with desired toppings.
Taco Soup Heaven!
Everyone enjoyed this soup including the kids! Feel free to add desired toppings like shredded cheese and diced avocado. If you like having leftover soup the next day like I did, this one tastes great re-heated! Enjoy!
This looks fabulous Lina! Looking forward to trying the recipe
Thanks Denise! Enjoy 😉
What does deglaze with broth mean?
Hi there! It just means to add liquid and scrape the bits of food from the bottom of pan. It’s especially important in any instant pot recipe where you sauté food first, so your pot will come to pressure without issue.
Do you think this soup would freeze well ? I’m trying to learn more about stocking my freezer with meals.
Yes I think I’d be great! Let us know as I haven’t tried it yet-great idea 😋
I wouldn’t freeze a soup w/ cream cheese (or any other kind of dairy base) b/c it will likely break/curdle when you thaw it. You could brown the beef w/ the aromatics and just freeze that in bulk, then pull it out and finish it off on a day when you want a no-fuss meal.
you can avoid the separation if you heat the soup straight from the freezer, rather than letting it defrost first and stirring constantly to keep the cream from breaking up. Or what my granny used to do, was reheat her potato soup in double boiler and that wouldn’t result in it curdling.
I’ve reheated it straight from frozen and it still curdled. Dairy can do that sometimes. I’d rather just make it fresh and refrigerate leftovers, but to each their own.
Do you think you could can/jar it? I’ve been wanting to make some things to put up but never know what is ok to can.
Sherri – I know you posted this a while ago, but wanted to let you know that this soup with the cream cheese added would be unsafe to can. Here is a link to the National Center for Home Food Preservation on what can and can’t be safely pressure canned. I’m sure you already know, but for others out there, it is unsafe to water bath can items like this and there is no safe method to can things that have pasta, rice, flour, or dairy products in them. https://nchfp.uga.edu/how/can_04/soups.html
That being said, I encourage you to give pressure canning some approved soups a try. It is nice to have some meals on hand that can be quickly prepared without taking up freezer space or needing to be defrosted. I’ve canned several different soups and they have come in handy during power outages and nights were I didn’t plan ahead for dinner – or did and the plan fell apart at the last minute.
Happy canning!!
I am considering pressure canning it myself without the dairy and adding that when it is opened.
YES! I freeze my taco soup all the time.
Yum!! Can’t wait to make this!! Thank you 😊
You’re very welcome 😊 thanks for stopping by!
I’m doing Keto and wanted to know the nutritional value for this Taco soup. I’m in the process of making it but wanted to know how to count it. Can’t wait to try it. Thanks
I have been keto since January and this is one of my favorite dinners! My kids both love it too. I know from experience it freezes just fine, and you can make it with shredded chicken too for a fajita version. Yum!
Oh great idea! Thanks for your input Sarah. ❤️
The whole family loves taco soup!! We will have to try the avacado with it!! Thanks!!
Thank you! I’m going to swap the ground beef for black beans for a vegetarian version.
Wonderful – sounds yummy 😋
you have to be careful with canning. something like a soup usually has to be done in a pressure canner. read up on canning and preserving. a great book is the Ball Blue Book for Canning…it has info on how and what you are able to can. 🙂
You could pressure can it if you left the cream cheese out (off the top of my head, I would say 90 minutes at 10lb pressure). To be safest, only can recipes that have been tested for safety using USDA standards.
I’ve been on the lookout for a delicious keto taco soup to replace my favorite taco bean soup. I’ll give this a try.
Yes I think you’ll enjoy it! Thanks Tera!

I didn’t use this recipe but I added mct oil to help with the car content…..and am thinking of using butter next time as well

Would this work as a stove top soup? I’m just not sure about the cream cheese heating up on the stove…
Delicious! My husband doesn’t like cheese of any sort but just asked that I cut the amount of cream cheese in half. Win! He didn’t say he’d never eat it again. 😊
I made this soup today! Just finished a yummy bowl! It’s so easy and delicious! Thanks so much for sharing. How many net carbs?
Does anyone know the nutritional break down?
The cream cheese didn’t melt—lots of little clumps. Any suggestions?
the only way I got it to NOT clump was to soften it, put it in my ninja with a cup of the soup and after purified, then add it to the soup.
What is Rotel with green peppers?
Correct 👍
Tried this soup recipe and the homemade taco seasoning and both were very delicious.
