Preheat the oven to 350 degrees. Prep a muffin tin with liners, or grease the pan.

To a mixing bowl, mash the banana. Mix in the eggs and pancake mix. Mix until the batter is somewhat smooth.

Use an ice cream scoop to fill the muffin cups. Add a few chocolate chips to the top of each muffin if desired.

Bake in the oven for about 14-15 minutes. A toothpick inserted into the middle comes out clean when the muffins are done baking.

Use dark chocolate protein cake mix as an easy way to make healthy chocolate chip muffins as a snack or breakfast

Here’s an easy recipe if you have ripe bananas lying around!

When my kids were young, I often made quick muffins using pancake mix with various add-ins as a shortcut. When I spotted this 3 ingredient idea recently on Facebook using just Kodiak protein pancake mix, bananas, and eggs, I had to test it immediately!

I did add a few mini chocolate chips to the top which are recommended but optional. Technically this is 4 ingredients, but is so quick and easy to make.

What else makes these healthy banana chocolate chip muffins special?

I love the idea that these could be considered a little healthier due to the added protein in the pancake mix. They are Weight Watchers friendly and I believe around 1 point each. I don’t specifically follow that program but enjoy trying the recipe ideas.

The result is a hearty and tasty muffin that has a great chocolate and banana taste. It’s not overly sweet, so if you are after a sweeter type of muffin, consider adding maybe a 1/4 cup of granulated sugar or sweetener of choice.

Extra Tips for making these banana chocolate chip muffins:

  • When you have over-ripe bananas don’t toss them. Instead, remove the peel and store them in a storage bag in the freezer. Then when you want to make this recipe or other, you’ll already have a ripe banana on hand!
  • You can experiment with other variations of this idea and consider using Greek yogurt in place of the banana. For instance, I’d like to try the blueberry pancake mix and add lemon and fresh blueberries to it to make muffins. I did notice there are muffin recipes on the back of the boxes for inspiration as well.

Easy baking hacks are my favorite and it takes very little time and effort to whip up these chocolate muffins! My kids had these after school and were super impressed with the chocolate flavor and soft texture. I warmed one up with my coffee the next day and it was delicious.

      I don’t know where you live but Publix does put these BOGO on occasion. That is the only time I buy them because they are quite pricey. By the way the muffins look delicious!

      I think you could experiment with that and maybe add sugar and cocoa powder. I have not tried yet.

    What is a good egg substitute for this recipe while using gluten free flour?

      I would personally try greek yogurt. Maybe 1/2 cup or so. I have not tried but have seen that used in place of eggs.

    I add some no sugar added applesauce to mine for a little extra moisture and use Lilys chips instead. Costco has the big box of regular flavor Kodiak for a better value.

    I made these yesterday and they all stuck to the cupcake papers so bad. What did I do wrong? Much of the cupcake is still stuck to the paper… 😩

      Oh darn. Mine stuck a little but not terribly. Here are some options for the future. Hope this helps!
      *give the papers in the pan a light coating with non-stick spray. (next time)
      *If you put them upside down into the microwave under a wet paper towel for 15 seconds, the cupcake papers may have an easier time coming off.
