Homemade Veggie Fried Rice Hip2Save

Making homemade fried rice at home is a super easy and delicious way to use up odds and ends from your fridge. Prepare rice the night before for an even quicker meal! Customize this recipe to the type of veggies and add ins your family likes. This also happens to be a yummy idea for a satisfying Meatless Monday family meal.

Veggie Fried Rice

(Adapted from AllRecipes.com)

makes about 4 servings


3 cups cooked brown rice (I used quick cooking rice)
2 and 1/2 cups chopped veggies (I used a mix of red onion, shredded carrots, edamame, corn & peas)
1 clove minced garlic
pinch of ground ginger
pinch of red pepper flakes
3 tablespoons canola oil
2 eggs plus 1/8 teaspoon sesame oil
2 tablespoons soy sauce
1 teaspoon of sesame oil

Making Fried Rice Hip2SaveDirections: Heat wok in your largest skillet on medium high heat and cook/brown eggs on both sides with a little sesame oil (cook eggs more like a well done pancake as opposed to scrambled eggs). Move cooked eggs to cutting board, chop, and set aside. Heat canola oil in pan and add onions, garlic, carrots, ginger, and red pepper flakes. After a couple minutes, add rice and remaining veggies to pan. Let fry a couple minutes and stir occasionally. Then add soy sauce and sesame oil.

Tip: Cold rice from the night before is a little drier and works great for stir fry. Next time you cook rice, cook a large batch and consider freezing it for future batches of fried rice.

We are huge fried rice fans in our house and everyone loves this method of cooking it at home! Enjoy!

    Did you forget to put the number of eggs in ingredients? Directions call for eggs but I do not see them listed.

    I LOVE making my own fried rice at home! So easy. I like to add shrimp to mine sometimes. Amps up the protein! And there are so many combinations to try–mine always comes out different depending in what I throw in!

    Follow the tip. Cold rice is best, otherwise it is super sticky! Been making homemade fried rice for years & love it!

      I agree! I cook my rice 2 days ahead of time and refrigerate it, uncovered. The drier the rice, the better! I also use fish sauce and no sesame oil because I enjoy Thai fried rice over regular fried rice. We love this dish so much that I invested in a nice wok!

    Collin do you have any FRIENDLY Braces recipes. I just got my braces this Tuesday and I’m sick of soup and pasta. Any other alternatives? (Something flavorful & won’t make it painful to brush and floss)

    I make something similar to this on days where there just isn’t a lot of time to prepare dinner. While the rice is cooking in the rice cooker, I sautee a bag of frozen veggies in coconut oil (it’s the only oil we use for cooking, but you could use whatever oil you want). Then mix it together with a couple tablespoons of soy sauce.
    I love easy, quick, nutritious meals.

    Also try cauliflower rice instead of rice just as delicious but better for you.

    We love fried rice! It’s a breakfast favorite for us. We usually put eggs and sausages with it. Best way to reheat rice the next day is to wet a paper towel, place on top of rice and heat in microwave. No more hard or dry rice!

      We add a dash of water to the rice, then microwave, same concept.

    Great recipe! I like to add 1/4 tsp of Chinese 5-spice to my fried rice.

    If you love garlic like I do, put lots of it, maybe 3-4 cloves. Minced it, saute it and add a little salt until brown. Then add the rest of the ingredients. Then you have garlic fried rice! The more garlic, the better!
    You can also use leftover rotisserie chicken, beef or pork, and you’ve got a complete meal.

    This was delicious! I added Spam for myself, probably too much sodium/nitrates for the kids though (and for me) but it is a treat.

    I cube leftover pork chops for my fried rice and add chopped green pepper, too.
