Keto Burrito Bowl with Cauliflower Cilantro Lime Rice

Ingredients

  • 1 pound ground beef
  • 2 tablespoons homemade taco seasoning
  • 16 oz. bag of riced cauliflower, fresh
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic (from the jar)
  • 1 Goya Sazón packet
  • ¼ cup cilantro chopped
  • juice from one lime
  • zest from ½ a lime
  • Optional Garnish Ideas: shredded cheese, sour cream, guacamole, diced onion

Directions

In a skillet on the stove, cook ground beef with taco seasoning. Set aside.

Heat olive oil in skillet on medium, and add garlic.

Add riced cauliflower, and cook for 5-6 minutes until tender, stirring often.

Season rice with ½ a packet of Goya Sazon.

Stir in lime juice, zest, and chopped cilantro.

Divide meat and "rice" into 4 bowls. Serve with desired toppings like guacamole and sour cream.

If you’re a low-carb dieter and craving a Mexican restaurant style burrito bowl with rice, we’ve got your back! Make your own grain free burrito bowl at home using cauliflower rice for a flavor packed, keto friendly meal that’s both a delicious and satisfying family favorite.


Try catering it to your family’s tastes by picking a protein they’ll love. I’m using taco seasoned ground beef, but you could use shredded beef, pork, chopped steak, or chicken if desired.

Tip: I’m using 1/2 a packet of Goya Sazon, a favorite seasoning used in Hispanic dishes like soups, rice, and even when roasting chicken. It produces amazing flavor and deep color using ground coriander and achiote. Goya products can be found in most grocery stores with the other Hispanic foods.

    Aimee, you can make a similar substitute if you have tumeric and paprika in your cabinet (maybe 1:4 on that). [Regular paprika, not smoked.] If you don’t have tumeric you could try half part cumin to 4 parts paprika. The Goya packet is annatto and tumeric—plus the MSG as ingredient #1 as you noticed, so use lots of salt too! 🙂

    Thank you for posting this! Do you know, if I make fresh riced cauliflower, will 1 head be enough (equal to 16 oz bag approximately). Any ideas? Not sure where I can find fresh riced bagged cauliflower near me.

      One head is more than enough for my family of 4. As an alternative, you can ck the freezer section, I’ve spotted lots of different veggie rices & noddles popping up. But I have found that I need 2 bags so I take the cost into consideration vs buying fresh and ricing/noodling myself.

    U can also use ground turkey or chicken and use cumin, turmeric and some red chili for seasoning with olive oil, garlic, salt and cilantro. That’s how I fill my tacos as well 🙂
