Ice Cream Sandwich Cake Recipe

yield: 6 SERVINGS

total time: 20 MINUTES

Ingredients

  • 7 ice cream sandwiches (I used the Blue Bunny brand)
  • 8oz. Cool Whip or whip cream equivalent
  • one candy bar, chopped (I used Twix)
  • hot fudge to drizzle

Directions

Line a loaf pan with wax paper.

Fit one layer of ice cream sandwiches on the bottom (if you use the Blue Bunny brand, the length fits perfectly in a loaf pan and you'll just have to cut one of the sandwiches in half).

Spread half the Cool Whip on top of the sandwiches followed by another layer of ice cream sandwiches and the rest of cool whip.

Then sprinkle the chopped candy bar on top (or chocolate chips would work, too!).

Freeze for at least two hours and up to a week.

To serve, pull up on the wax paper – the cake should come right out. Place on a cake plate. Before serving, drizzle with chocolate fudge if desired.

This super easy ice cream sandwich cake recipe is a frugal no-bake dessert made out of ice cream sandwiches! It takes less than 10 minutes to put together but looks like a fancy icebox cake. Dairy Queen, look out!

Hip Tips:

  • Skip the whipped topping and use ice cream in between your layers (toffee, anyone?).
  • Mix chocolate pudding with the cool whip for a chocolate-y take.
  • Try flavored ice cream sandwiches like mint chocolate chip or salted caramel.
  • Make this recipe with Klondike bars instead of ice cream sandwiches for a different spin.
  • You can sub in Magic Shell for the fudge topping. This should set up more quickly, too.
  • Use sprinkles to fit the festive occasion (red, white, and blue for Independence Day, etc).

    I love this! I have made it with heath bars and drizzle with caramel syrup and the chocolate syrup that hardens. Also great sprinkled with nuts or marashino cherries! Never thought to use a loaf though, its so decadent and pretty. I usually just put mine in one of those throw away foil pans. Thanks for reminding me of this, Lina!
