Vegetable Frittata (Meatless Monday Idea)

Ingredients

  • 8 eggs
  • 3/4 cup milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 8 oz. package mushrooms, sliced
  • 1 red pepper, diced
  • 1/4 cup white onion, diced
  • 1/4 cup green onions, sliced
  • 1/2 cup frozen peas
  • 3 oz. shredded cheddar cheese

Directions

Preheat oven to 400 degrees. Heat a 12 inch oven proof skillet over medium heat.

Melt butter and sauté veggies for about 10 minutes until tender.

Whisk together eggs, milk, Dijon mustard, and salt & pepper. Pour egg mixture over veggies, and arrange veggies evenly in skillet. Cook for about 3 minutes on stove without stirring.

Sprinkle cheese on top and place into oven for about 10-12 minutes until set. Serve warm or room temperature. Serves about 4-6 .

    Ladies..does anyone no ..if u use egg beaters/egg whites..do u still use the same amount of milk ???…and with the milk… can i use skim???..id love to make this camping..on the gas grill..tia..

    Some people use meatless Monday’s to save money and help your family get more portions of vegetables, it’s good to have at least one day a week without any meat. It’s a great way to get your picky kiddos to eat their veggies in a fun way. You all can plan your meatless Monday meals together. 🙂

    For us vegans you can use 1lb firm tofu, alternative milk, cornstarch, nutritional yeast, and turmeric (for color & health benefits). Mix in food processor; the cook time is a bit longer too 30-40 mins but similar results!

      Thanks! I’m a vegetarian, but have been planning to start doing vegan Mondays.
      And I *love* the taste of nutritional yeast! In fact, I found a great recipe for a “cheesy” sauce that I use regularly now.

    I’ve been looking for a pan to make frittatas in the stove/oven that isn’t cast iron. Does anybody have a tried and tested pan they would recommend that isn’t too heavy?

      I made frittatas in Circulon Hard Anodized pan (stove top/oven). Worked great for me. Just wrap the handle with aluminum foil.

      If you have Corningware, it woks both on stovetop and in the oven.

    The touch of mustard and peas were great. I added sprinkles of onion and garlic pwdr, Italian seasonings, turmeric, cumin, two jalapenos, a diced zucchini, and used a whole dozen eggs. What a wonderful meal! Thanks.

    Can I freeze this recipe after cooking? I made it and it was phenomenal! Just have a bit extra and would love to be able to nuke a bit in the AM.
