Walnut Chicken Salad Sandwiches (Quick Summer Meal Idea)

Walnut Chicken Salad

Ingredients

  • 2- 12.5 oz cans chicken breast meat, drained
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/3 cup walnuts, chopped
  • 1/3 cup parsley, chopped
  • 1/3 cup celery, chopped
  • 1 teaspoon Herbes de Provence
  • salt & pepper to taste

Directions

In a medium sized mixing bowl, use a fork to separate chicken.

Stir in mayo and sour cream.

Add remaining ingredients, and stir until combined and seasoned to liking.

Refrigerate until ready to serve inside sandwiches or on top of lettuce or celery.

Need an easy picnic lunch idea this summer?

Try making some creamy Walnut Chicken Salad using a combination of fresh and dried herbs plus walnuts and celery for crunch. This is such an easy meal to throw together and this simple recipe uses canned chicken breast meat from the pantry is both yummy and convenient!

Whenever we go on a picnic, camping, or on road trip I usually make a batch of Walnut Chicken Salad to put in a cooler and take with us to make quick sandwiches or wraps.

I love that Chicken Salad is such a versatile idea that you can definitely customize with so many different add-ins, and can use leftover chicken, store bought rotisserie chicken, or in a pinch – canned chicken from the pantry.

Tip: I always keep canned chicken from Costco on hand for last minute sandwiches, soups, and casseroles.  

Walnut Chicken Salad

This delicious and easy Walnut Chicken recipe uses common pantry ingredients and takes just a few minutes to compile.

Ingredients

Red grapes or chopped apple are common add-ins to Walnut Chicken Salad so add those if desired too! One of my favorite spice blends is Herbes de Provence and I use it here, and additionally when roasting a chicken, turkey, and in homemade soups. It usually has marjoram, rosemary, thyme, oregano, and lavender.

Don’t love mayo? Use plain Greek yogurt instead.

This doesn’t have to be served as a sandwich!

I also love the idea of serving Walnut Chicken Salad on lettuce boats using Romaine lettuce or even on top of larger pieces of celery! Yum!

      On the topic of grapes, my family and I just tried “cotton candy grapes.” Yes, they taste like cotton candy (I think) upon first bite…I was told it’s because they are grown to have a higher sugar content.

    Looks delish Lina! This is almost I make mine, but w/out the sour cream. I’ll have to try it with next time.

    When I’m not in the mood for bread or crackers, I like to scoop out the seeds of a halved cucumber and use it for chicken & tuna salads!
