If you enjoy portable, no-bake oatmeal snacks as much as we do, these no-bake Pumpkin Oatmeal Energy Bites are a satisfying snack to keep on hand for after school (or any time of the day)!

Our Oatmeal Energy Bites have been one of the most popular recipes we’ve shared here at Hip2Save, and the pumpkin version does not disappoint!

Mix ingredients, roll into balls, and place in the freezer until they set-up!

Not only are they tasty, these energy bites are super easy to mix together, and there’s no baking involved! These Pumpkin Oatmeal Energy Bites add a touch of fall, with pumpkin puree and pumpkin pie spice blended into chocolate chips and oatmeal. They are so YUMMY and fun to make.

You can definitely alter these simple ingredients to include add-ins of your choice. For instance, you can delete the chocolate chips and add in coconut, or even some chopped nuts would be great! Use a favorite nut butter, and you can either use quick oats or regular rolled oats.

No-Bake Pumpkin Oatmeal Energy Bites

Oatmeal, pumpkin, peanut butter, and honey get rolled into portable homemade bites for at home or on the go snacking!

Serves: 26-28

Ingredients

  • 1 and 1/2 cups rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup mini chocolate chips
  • 1/3 cup honey
  • 1/4 cup ground flaxseed
  • 1/4 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice

Directions

  • Step 1:

    In a large bowl, mix all ingredients together well.

  • Step 2:

    Roll out teaspoon-sized balls and place on a baking sheet covered with parchment paper.

  • Step 3:

    Freeze until set (about one hour).

  • Step 4:

    Enjoy and keep leftovers in a Ziploc bag or a covered container in fridge or freezer.

If you're wanting to print a certain deal, blog post, or the Weekly Store Matchups from your HIP list, click on the small blue printer icon in the upper right corner of the HIP list. If there are deals (or portions of deals) that you are not interested in printing, just click on the red x button to remove them.
