Ingredients

  • 2 lb. ground beef or turkey
  • 1/2 yellow onion, chopped
  • 15 oz. can whole kernel corn, drained
  • 1.25 oz. taco seasoning packet
  • 1 oz. ranch dressing packet
  • 2 - 14.5 oz. cans diced tomatoes
  • 4.5 oz diced green chilies
  • 10 oz. can red enchilada sauce
  • 2 - 15.5 oz cans kidney beans, drained
  • 15.5 oz. can black beans, drained
  • 14 oz. can beef broth
  • 1/2 cup chopped cilantro
  • Garnish with sour cream, grated cheese, green onion, jalapeño, tortilla chips, and/or cilantro as desired

Directions

Heat a skillet on the stove to medium heat. Crumble and brown ground meat and chopped onion together until cooked. Drain if necessary.

Place the cooked meat along with all other soup ingredients in your Crockpot slow cooker, and stir. Close the lid and let cook on low for about 3-4 hours.

Serve with desired toppings such as sour cream, grated cheese, green onion, jalapeño, tortilla chips, or more chopped cilantro.

Anyone here also LOVE a good Crockpot slow cooker soup?

It’s soup season, and that means my Crockpot will be workin’ overtime to keep my family fed and happy! One of our favorite hearty and comforting meals using pantry staples is ranch taco soup in the Crockpot. It’s kind of like traditional ground beef and bean chili, but with a southwest taco twist.

The result is a flavorful comforting broth soup featuring green chiles, crumbled beef, cilantro, diced tomatoes, and both a ranch seasoning and taco seasoning packet for lots of flavor. You can top it with any of your favorite taco toppings such as shredded cheese, sour cream, and jalapeños. It’s a satisfying and easy to make soup all will love!

Tips for making the BEST ranch taco soup in your Crockpot:

  • I am making this in my slow cooker for convenience, as I love that it will stay warm inside until everyone is ready to eat. You can instead just cook it all in a large pot on the stove, and let simmer on low for an hour or so if desired.
  • I have also made this using shredded cooked chicken instead, and it’s very tasty too! If you wanted a meatless version, it would be easy to omit the ground beef and maybe add diced zucchini or other veggies.
  • This idea is very adaptable to taste. For instance, you can add a handful of diced jalapeño, chile pepper flakes, or hot sauce to make it spicier if you wanted. Feel free to add different beans if desired, too.
  • This makes a lot of soup! I have a 6-quart oval-shaped Crock-Pot and it basically fills it. I love soup for leftovers, so for us, it works. You can definitely consider cutting this recipe in half for a smaller batch.

I love this taco flair to a basic chili recipe!

It gives it such brilliant flavor, and the taste and texture overall are SO YUM! This would be great for entertaining on game day as well, and would be easy to serve straight out of a slow cooker.

    Can you use Rotel tomatoes instead?

      Yes, I just use one can of mild diced tomatoes with green chilies. I also omit the enchilada sauce and beef broth. Add a can of pintos, only one can of the above beans, and only one pound of beef and it matches the recipe I have used for years. I prefer white shoe peg corn. Either way, the recipes will be delicious.

      You could honestly leave out. Would still be delicious. Taco sauce would be similar or maybe add some Mexican spices to a cup of marinara like garlic cumin Chile powder. Hope that helps!

    I make this also, but I do not drain any of the can of beans or corn. I also don’t use the enchilada sauce. I just add more tomatoes or Rotel. I have found that Taco Bell Taco Seasoning has the best taste. I also use Chili Beans for more spice.

      It will be great without ranch also. We have a dairy/egg allergy kid here so never use the ranch. I always add extra cumin and chili powder (because they are my favorite). This soup is so forgiving! Use what you have on hand!

    This is an excellent weight watchers recipe and a staple in our home. With leftovers drain it and use it for nachos, enchiladas, dip with chips. It also freezes in individual and family sized portions really well.

    ULTRA BUDGET TIP: For anybody who (a) really needs to save some food money, (b) is trying to eat more plant-based and/or cut animal fat for heart health, or (c) is just out of hamburger, keep a container of “Textured Vegetable Protein” in your pantry. Use it in place of hamburger in recipes like this! (It looks like cereal, and you can buy it in bulk at Whole Foods or by the bag from Bob’s Red Mill). It lasts pretty much forever in the pantry. Throw half a cup (or more if you want) of dry TVP in a pot of soup like this, and it reconstitutes to the consistency of hamburger, absorbing the soup flavors. It works like magic. Most people will have no idea they’re eating soy not hamburger when you use it! For Enchilada sauce, there are packets that you can add water to that are usually cheaper than the cans — look by the taco packets and also in the Mexican food section of the supermarket, where they have the cheap packets of spices (I’ve seen enchilada sauce mix both places for about a buck).

    This soup was really good. I added a little chili powder and coriander seed and reduced the taco seasoning (to lower the salt) and it came out great. I also added about 3/4 cup frozen mixed veggies. I made it on the stovetop and let it simmer about an hour. It’s a keeper!
