Busy Mornings? Try This Freezer Breakfast Burritos Pouch Hack!
No more soggy tortillas. Learn the secret behind these easy freezer breakfast burritos w/ this make-ahead recipe! They’re the perfect meal prep breakfast burritos!
If breakfast burritos are one of your favorite meals too, listen up!
They also happen to be such a great option if you are looking for meals that you can prepare in advance to enjoy at a later time. These burritos can be made ahead of time, placed in the freezer, and then reheated at your convenience.
I’m a fan of anything that makes busy weekday mornings easier and more delicious!
The only downside to freezing burritos is the tortilla’s texture when reheating.
In my opinion, it’s never quite the same as a fresh tortilla once it has been re-heated. However, here’s an interesting way to easily re-heat these frozen breakfast burritos that prevent the tortilla from becoming soggy.
It’s called the pouch method. I tried it with success, and you should, too!
With this method, you freeze just the filling in individual freezer sandwich bags.
Then when you’re ready for a burrito, place the frozen filling on a plate (minus the bag) and warm it up in the microwave for a few minutes. Then you can just roll up the filling inside a fresh tortilla, and enjoy!
If you find the microwave makes the burrito soggy, you could also throw it in the air fryer to avoid sogginess.
The best part about this idea is that ALL the ingredients can be catered to your family’s taste and dietary needs. We love the bacon, potato, cheese, and egg combo in our burritos, so that’s the type of breakfast burritos I usually make.
Bacon Egg & Potato Breakfast Burrito Pouches
yield: 6 SERVINGS
prep time: 15 MINUTES
cook time: 25 MINUTES
total time: 40 MINUTES
Here's how to make ahead a delicious bacon, egg, and potato burrito filling to reheat later for quick and easy breakfast burritos!
Ingredients
- 1 pound bacon
- 1 pound red potatoes, chopped
- 2 tablespoons olive oil, divided
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1/2 teaspoon ground paprika
- 1/2 teaspoon salt (or more to taste)
- 1/4 teaspoon pepper
- 3 cloves garlic, minced
- 6 large eggs
- 2 cups shredded cheese, Mexican blend
- 12 inch flour tortillas (for serving)
Directions
1
Cook the bacon on a skillet or in the oven. Let cool, chop into smaller pieces, and set aside.
2
On the stove, boil or steam chopped potatoes until tender. I use a pot with a steam basket. Drain liquid and heat a large skillet on the stove with olive oil.
3
To the skillet, add onion, bell pepper, and potatoes. Mix and add all seasonings (paprika through minced garlic) and brown the mixture until the potatoes are crisp on the outside, and the onions and bell peppers are tender. Let cool.
4
Whisk eggs in a bowl and scramble them in a skillet on the stove. Season with a pinch of salt & pepper. Undercook them slightly, so they won't be overcooked when re-heating later.
5
Once all breakfast filling ingredients are cool, divide evenly into 6 freezer sandwich bags, including the potatoes, bacon, eggs, and cheese. Seal bags and store them in the freezer for up to 3 months.

To Make a Burrito:
Take the filling out of the bag and heat it on a plate in the microwave for 2 minutes. Wrap up the filling in a large fresh tortilla, and enjoy!
More tips for these make ahead breakfast burritos:
- Breakfast Meat: Feel free to use bacon, sausage, or chorizo; skip the meat altogether and add beans & veggies.
- Potatoes: Make delicious seasoned potatoes by first steaming chopped potatoes, and then pan-frying them with onion and bell peppers. You can take a shortcut by preparing frozen tater tots or frozen hash browns, too.
- Eggs: We’ll be scrambling eggs for these burritos. Consider slightly undercooking them, as they’ll cook again during the re-heating process.
- Cheese: You can use any shredded-style cheese you’d like. I’m using cheddar and Monterrey Mexican blend, but I think using some pepper jack cheese would also add lots of flavors if you like spicy.
- Need a good salsa recommendation? Even though homemade fresh salsa is usually the BEST, if you’re needing an excellent jarred salsa recommendation, my family is currently loving Mateo’s Gourmet salsa! I get it from Walmart or Costco, and it’s YUM!
Freezer breakfast burritos are so good! 🌯
Even if you’re not wanting to freeze this burrito filling and you’re just craving tasty breakfast burritos – give these a try! The seasoned potatoes are insanely yummy, and they pair so well with the bacon and eggs. Dish it up with your favorite salsa and you’re good to go!
PS – This doesn’t have to be reserved for just breakfast — I can enjoy a breakfast burrito for any meal. 😉

Oh good! Yes, it’s so quick and yummy to warm up!
I’d try this! The recipes where they are already in the tortilla in the freezer did not turn out imo.
Ya it can be tricky to reheat properly I agree. I think you’ll like this!
Such a great idea! Going to make these this week. 🙂
Yay! Enjoy SaraBella!
I always am thinking of easy, freezable dinner ideas, but NEVER breakfast. Thank you so much for this. I am going to make these tonight!!!!!
These would also be good for breakfast for dinner!

What a great idea! Thanks for the recipe!
Sure! Enjoy! ❤️
I make different varieties of breakfast burritos and sandwiches every week – i think the prob lies when using a microwave to reheat. We don’t use/have a microwave so i take the item out of the freezer the night before, have it rest in the fridge overnight and in the morning just toss it on our cuisinart grill panini press (or a george forman would work well too, id imagine) 3-5 ish min later its steaming hot and no soggy-ness!!
Oh thanks for the tip! I have used the air fryer too ❤️ 👍
Just put my potatoes on the stove to start this! Thanks!
Oh yay Laura! Thanks for sharing <3
I never have luck with frozen eggs. They turn rubbery or gray. Any tips before I try this? Love the idea! ❤️
I recommend undercooking them a little bit, do they don’t get overcooked in microwave. I didn’t think they were rubbery or gray using that tip. 👍
We do this, but we fill the burrito, then wrap the burrito in a paper towel and then aluminum foil. Then place the burritos in a freezer bag and freeze. When you’re ready for one, take off the foil and microwave for 1 minute with the burrito still wrapped in the paper towel.
This method works great for us to take on the run in the mornings or to be able to heat up once we get to work.
Our favorite meat is a jalapeno smoked sausage! Also using a low carb tortilla makes this a great keto friendly breakfast!!!
Wow great tips thanks for sharing Faith!
Are there any reusable bags (that are good sized for the filling) that I can use to freeze and microwave without melting cheese onto my plates?
Have you tried Stasher bags?! They come in various sizes and are amazing for storage and reheating! I am a fan.

You know you can buy frozen Potatoes O’Brian – precooked chopped potatoes with onions and bell peppers. Save all that work!
I wonder if this would be a good time saver for camping too! Just make and freezer to reheat on a camping stove!
That’s a great idea Bobbie!
Lina- you are amazing! Thanks so much for this idea, just brilliant!
Oh thanks so much for your encouragement, Tina!
This is great! Lina, Can you please post more meal-prep ideas like this?? I’d love to see some recipes that you like for meal-prep easy dinners with the same concept (make ahead and put in a ziploc in the freezer, etc). Thank you!!!
Thanks so much for this feedback! Glad you like this type of post Joan!
I make breakfast burritos with uncooked tortillas. A bit more work as you have to cook them before adding filling but they freeze well and have never been soggy.
Oh love those too! Great idea Angie 🙌🏼
