Avocado Chicken Salad (Only 3 Ingredients)

Looking for a super easy and yummy meal you can throw together with leftover chicken? Try this easy and healthy avocado chicken salad (shhh! – you actually replace mayo with creamy avocado)! Serve this 3-ingredient meal on bread, pita, lettuce leaves, or on top of additional sliced avocado.

Avocado Chicken Salad

Ingredients:

2 cups shredded chicken (I used rotisserie chicken)
1 large avocado, cored & chopped
1/4 cup cilantro, chopped
*salt & pepper to taste

Directions: Add ingredients in a bowl and mash with a fork until well combined.

I love that this recipe offers a basic foundation – leave the salad as is or change it up a bit by adding red onion, walnuts, garlic powder, or even a few tablespoons of Greek yogurt. What do you like in your chicken salad?

    I will buy a larger fresh whole chicken and cook it for dinner, than make chicken salad the next day with whatever chicken is left. My daughter keeps a close eye to make sure there is enough chicken left over for chicken salad. I like red grapes, toasted pecans, celery, mayo, any mustard I have on hand, pickle juice( or lemon juice), onion powder, garlic powder, sugar, and salt & pepper, and a dash of hot sauce… At this point I would say anything I have on hand that sounds good… I serve it with fresh spinach leaves and some sort of bread product…HTH

    I also like to do this with egg salad too for a vegetarian-friendly option. Boiled eggs, avocado, Greek yogurt, smoked paprika, and S&P.

    I cannot stand cilantro so I tried this today by substituting fresh basil… So so good!

      I love cilantro!! But there is a gene that some people carry that makes it taste like soap. I would guess that you have that gene 😉

    If you want it to keep for a couple of days, add some lime juice on so the avocado won’t brown. 🙂

    Looks delish, can’t wait to make this!!! I don’t like mayo, so avecado is a great idea. Any ideas for egg salad without mayo?

      I use sandwich spread instead of mayo for egg salad

      Plain greek yogurt? Or possibly avocado might be tastey as well.

      Have you heard of Just Mayo? I read good reviews about this product and I want to try it. My son has egg and nut allergies, so his sandwiches are dry, unless we have avocado on hand. Gotta get it on my next trip to Target.

        I tried it, found it at the dollar tree. It’s good, I don’t hate mayo but prefer to not eat it, I had no guilt using this and tasted great!

      We make avocado egg salad, no mayo at all.

      Avocado works well. I mash the yolks & blend them with avocado, then add some s & p and sometimes fresh tarragon or pickle relish. Avocado provides great creamy texture, but no strong flavor.

    Looks good! I make a super simple cucumber dill chicken salad w/ chicken, dill weed, cucumbers & greek yogurt that we all love. Great for summer months too! So many variations you can do.

    Thanks! Now I know what I’m eating for lunch! Have some leftover rotisserie chicken from dinner on Monday and an avocado in the fridge. No cilantro though, so I’m gonna sub with chopped red onions and celery. Can’t wait!
