Starbucks Pumpkin Bread

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 3/4 cup white sugar
  • 1/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup canned pumpkin puree
  • 3/4 cup vegetable oil
  • 1/2 cup roasted pumpkin seeds *optional

Directions

Preheat oven to 350 degrees.

Grease one 8×4 inch loaf pan.

In a large bowl – mix flour, baking soda, nutmeg, cinnamon, cloves, ginger, baking powder, and salt together.

Beat eggs, white sugar, brown sugar, and vanilla extract in another bowl with an electric mixer.

Beat in pumpkin and oil.

Add flour mixture and mix until batter is smooth.

Pour batter into the prepared loaf pan.

Sprinkle Pumpkin Seeds over the top.

Bake at 350 degrees until the top is dark brown and a toothpick inserted into the center of the bread comes out clean, about 60-65 minutes.

Let cool in the pan.  Invert onto a wire rack and slice it into 1-inch thick slices. Makes 8 Servings.

I’m so happy to have a recipe just like the Starbucks version. To be sure, today I bought a slice of theirs and made my own at home. The verdict? This copycat version is definitely super close and really yummy! My family LOVED it.

The texture and sweetness remind me of soft banana bread but in a pumpkin version. The pumpkin seeds taste awesome on top too! What a perfect fall treat. Enjoy!

      I am the “pie-man” for the Holidays, sometimes making pies in exchange for other services from farmer friends. I have even planted my own pumpkins. It used to be you could buy pumpkins in grocery stores for Thanksgiving, but no more. I have to get the pumpkins for Halloween and pressure-can them for use later on.     Still have a bottle of Vodka hiding in my closet ( we are not drinkers–although some days I just stare at it wondering!?!?) from a past post on making your own vanilla. Made it once and it WAS really good. However, them beans are sooooo expensive. Any suggestions as to the best place to purchase?

    So I followed the recipe exactly. Put it in 8.5×4.5 pan and it rose up and over the pan and is now burning on the bottom of my oven.
    HUGE FAIL. I should’ve used a 9 inch pan maybe.
    Also WAY to much nutmeg. 1/2 tsp is PLENTY. That’s a very strong spice.
    I’ve baked a lot and this was a huge disappointment.
