Jalapeño Popper Dip
(Found on KraftRecipes.com)
one 8 oz. package cream cheese, softened
1/2 cup real mayonnaise
4 oz. cheddar cheese, cubed (or Velveeta Cheese if you prefer)
3 jalapeños, finely chopped & seeds removed
1 green onion, chopped
12 Ritz crackers, crushed
1 tablespoon butter
Directions: Preheat oven to 350 degrees. Mix softened cream cheese and mayo well. Add in cheddar cheese and jalapeños. Mix well and press onto the bottom of a 9 inch pan. Mix crushed crackers with melted butter and sprinkle them on top. Bake for 20 minutes or until heated through. Top with sliced green onions. Serve with more crackers or tortilla chips.
A friend of mine recently made this dip and it was gone in a flash so consider doubling it and serving it in a larger pan if you expect a big crowd. Enjoy! 🙂
