To fry the tortillas:

Place a medium-sized skillet on the stove, and pour vegetable oil about 1/4 inch deep into the skillet. Heat the oil to medium/high heat until sizzling, but not smoking. Place a single tortilla in the oil using tongs, and fry for about 30 seconds until browned on each side. Transfer the tortilla to a paper towel to drain the grease. Repeat with the rest of the tortillas, and set them aside.

To make the taco meat:

To the skillet on the stove, cook ground beef, and mash meat very finely using a potato masher. Drain the grease. Season with taco seasoning, and add water. Let simmer for a few minutes, and remove from heat.

To assembly the pizza:

Preheat the oven to 400 degrees. Add 4 of the crispy flour tortillas to a sheet pan, and spread a layer of beans onto each tortilla. Add the ground beef to each tortilla. Top each Mexican pizza with a 2nd tortilla. Spoon enchilada sauce over the top, and then sprinkle shredded cheese over the top of each.

Place pizzas in the oven for about 10 minutes or until cheese is bubbling and melted. Take out of the oven, and then top with any additional toppings like chopped tomato, green onion, and olives. Enjoy warm!

Calling all Taco Bell fans!

We’re over the moon that Taco Bell’s Mexican Pizza finally returned after a heart-wrenching hiatus. To celebrate, and because hitting up Taco Bell isn’t always an option, we made a copycat Taco Bell Mexican pizza recipe similar to the Taco Bell version. It is such a fun and easy dinner idea! In fact, I’m just gonna admit this easy-to-make homemade version is even more fantastic and makes my mouth water just writing about it.

It has a double layer of crispy fried tortillas, taco-seasoned meat, refried beans, enchilada sauce, and is topped with melted cheese, toppings, and of course – Taco Bell hot sauce.

I love that when creating your at-home version, you can completely customize the toppings and really make it a meal your family will love – using the type of ingredients you enjoy! Everyone can make it as spicy as they like, and you can also opt to skip the meat and use beans only as a meatless option.

This simple homemade version is even better than the real thing, in my opinion!

Hip tips for making your own Taco Bell Mexican Pizza:

  • Love the finely ground texture of Taco Bell ground beef? Use a potato masher when cooking it on the stove, and add a little extra water to the meat. You can even throw it in a food processor after cooking if desired to get that same super-fine texture.
  • Frying tortillas in a little oil is actually very easy! It’s worth the little bit of extra effort to get a crispy tortilla because it tastes THAT much better! I’m thinking you could also spray a tortilla with cooking spray instead, and throw it in the air fryer if you didn’t want to fry them as a similar alternative.

Ohhh, my goodness… these are so GOOD. My kids happen to love Taco Bell and were definitely big fans of this idea. My husband worked late and had to reheat his using our air fryer, and it still tasted just as delicious re-heated that way. Overall, I loved the taste of the enchilada sauce, with the beans and crispy tortilla — this is a winner!

    Oh this looks soo good! I made chimichangas a few weeks ago in the air fryer, brushing all sides with avocado oil and they got nice and crispy! Adding this to my menu for next wk (though I might swap out and make this Saturday instead!)

    How can anyone enjoy canned refried beans?! They smell like dog food and taste horrible. Make homemade. It’s so easy and delicious!

      yikes, that’s kinda rude, no?! To each their own, you shouldn’t snub someone if they have to use canned beans from time to time. yes, I do prefer to make my own. but ya know, life sometimes is hectic. so yeah, I’ll pop open a can of refried beans if I don’t have a container in my freezer. if refried beans smelled anything like dog food, I certainly wouldn’t use them (canned dog / cat food sets off major gag reflex!!)

      Cat62, Easy!! Take a can opener, open the can of refried beans, dump the contents into a pan, add a little butter, heat, stir! and serve! TASTY!!! And a must for taco night!! 😉 🙂 Seriously, they are so good.

      I get dehydrated refried beans at the GFS store. You just pour boiling water over and wait 5 minutes for them to rehydrate. They are creamy and awesome, and you just make whatever you need. I agree about canned refried beans — yuk! I usually only need about cup, so it’s not worth it to boil a bag.

        I do too! They are SO good, and fast! I add some smoked paprika, garlic powder, and some onion powder, and they taste amazing!

      I actually worked at Taco Bell for a while. The refried beans come in a freeze dried powder and we added super hot water to them and gave them a stir. That was it. No cooking necessary. Same goes for many of the food items on the menu at the time. They were either precooked at the factory and we just heated it or it was deep fried on site. Very little “fresh” cooking anything tbh. I still eat there. The food is awesome and budget friendly. Especially when you are feeding 5 people

    Loved this recipe but it took way longer than the times indicated, I would say maybe 1.5 to 2 hours. I would love to try the air fryer method for the tortillas, for me it was very hard to cook them evenly crispy.

    We’ve been making these for a while, and they’re delicious! After frying the tortillas, I place them vertically on a cookie cooling rack over a piece of cardboard or paper towels (usually just rip open a cereal box or something that I’m going to toss anyway) they drip dry and end up perfectly crisp

    This was fun and easy. Made the two layers, melted the cheese over the sauce on top layer; then put out toppings like olives, onion tomato, jalapeno, sour cream, etc. Everyone had a blast!

    Hi Lina, thanks for sharing this easy and delicious recipe. I have found instead of frying the tortillas in hot oil, you can preheat your oven @375, brush both sides of the tortilla with olive oil, place on baking sheet lined with parchment paper and bake for approx. 10 mins. (ovens will vary). No need to flip and they do get hard/crispy. You can do two baking sheets at the same time just switch shelves half way through baking time. This saves on calories and you can do multiple batches instead of frying a single tortilla. You can even sprinkle your favorite seasonings on the tortilla after brushing with the olive oil for added flavor. I love Penzeye’s Red & Black Pepper for added heat.
