Eating low carb or Keto?
Here’s an easy make-ahead breakfast idea that will come in handy for those busy school/work mornings to get your day started! Bake these yummy ham and egg cups in a muffin tin for a handy breakfast on the go.
Baked Ham & Scrambled Egg Cups
yield: 12 SERVINGS
cook time: 15 MINUTES
total time: 15 MINUTES
Make these easy breakfast protein filled cups, perfect for a low carb recipe! Load up your baking muffin pan with eggs, ham and it's ready!
- 10 large eggs
- 12 slices of deli ham
- 1/2 cup cheddar cheese, shredded
- 1 and 1/2 cups diced veggies (I used bell peppers, red onion, and green onion)
- nonstick spray for muffin tin
Preheat the oven to 400 degrees. Spray muffin tin with nonstick spray. Place a piece of ham in bottom of each cup.
Add a little shredded cheese to each cup. Whisk eggs together and pour into each cup.
Chop and saute veggies for a few minutes with a small amount of olive oil and add salt & pepper to taste.
Add a little of the veggies to the top each cup.
Bake at 400 degrees for about 15 minutes until eggs are set. Makes 12 individual sized cups
I love this recipe idea because it’s so versatile! Just swap out veggies based on what add-ins you prefer and customize with ingredients your family loves.
These yummy cups can be quickly reheated in the microwave for an easy and filling breakfast.

Thanks. Sounds so good. Wish I had some ham I would make for dinner. May have to run to the store to get ham to make for breakfast.
Yes we have had this for dinner! Yum
Love it! I am definitely going to get some ham slices next time I go grocery shopping so that I can make this
Great for a lazy snack too 🙂
Does it work if you do no veggies?
Are these mini muffin tins or regular muffin size?
At first I read crab instead of carb and my heart swooned 😍😍 we will still try these, they sound great! Just out of curiosity, was there a reason that you didn’t use cupcake liners? I hate Pam and having to wash my cupcake/muffin pans. Thanks for the recipe!
Oh good idea! Didn’t even think of that!
Thanks, Lina! We will try it soon. Can’t wait, thanks again! P.S. Your food always photographs so well, I am jealous!
We’ve tried paper muffin love need and they didn’t work well- lost a thick layer to the paper since it stuck so much. For egg dishes I much prefer using cooking spray right on the muffin pan.
Silicone baking cups 😉 even the dollar store has them
Oh thanks Julia!
We eat these weekly and love them! So easy to make a batch and heat them up throughout the week.
How long in the microwave to reheat them? I have a 1200 Watr
Sounds really good.. Thanks for the recipe 💕
These are yummy without ham too. Or replaced with bacon or sausage. Other veggie ideas are shredded spinach or zucchini.
I can’t wait to try this! Sounds great. Thank you.
I make different versions of this for my breakfasts at work. This week it is eggs , cheese, onions, jalapeño, and red peppers, with a little salt and pepper. They are super versatile. I’ve wrapped them in green chile too, instead of ham.
Catie, do you freeze them or do they stay fresh in the fridge for a whole week? Thanks!
My “what’s for dinner” solved for tonight. Thanks again for another great recipe Lina 🙂 🙂 Looks delicious
These are really good straight from the fridge, too. But I’m one who eats cold pizza, chicken, etc…. 😉
Would Canadian bacon work instead of the ham?
I was wondering the same thing….
I was inspired & made them! Kids & husband & I loved them – easy too! Thanks Lina👍😊
Oh that’s so great! Thanks for reading.
These look really good great for college students must try when I start in the fall!! Thanks for the ideas!!
Anyone try this with egg white substitute from a carton?
I make these in different versions all the time and only use egg white from the carton and they turn out great! I make them with ham, turkey bacon or sausage.
These look great! Going to try them out. Needed some good, quick breakfast ideas to get my son off the cereal!!!
Thanks for sharing this recipe!
How would you make these with sausage though? I’m thinking just use pre-cooked & crumbled sausage.
And if you did it with bacon, would you just pre-cook the bacon (I would assume to pre-cook the bacon…_) and layer on the bottom in strips?
Yes I think sausage and bacon would be great as well! I haven’t tried but I probably would cook bacon on the stove a little first then put in muffin pan. Thanks!
I have used precooked and crumbled bacon in these and it’s yummy. Definitely have to cook them before adding to this recipe
Thank you!!! I’ll try it later.
Just made! These are so stinking good! Thank you!!! Just ate 3!
I’m making these right now I’ll let yall know how they turned out.
Anyone try freezing these?
can these be frozen?
Anyone know what the calorie count might be for these?
Can these be frozen, or just refrigerate?
I made these last night and my girls loved them! In fact I didn’t have any left to take to work today. Thanks for the recipe!
Great news! Thanks Becky!
I used candian bacon & chopped in up with egg & seasoning blend (onion, bell peppers, celery) turned out great
What is the calories on these?

Hope that helps!
I see a few questions asking if these can be frozen, can they?
Yes for sure these can be frozen. Let them cool then store in a ziploc bag sealed. Then thaw when you’d like one or stick in microwave to reheat.
