yield: 6 SERVINGS
prep time: 10 MINUTES
cook time: 15 MINUTES
total time: 25 MINUTES
Here's an easy and delicious way to get all the flavors of homemade lasagna in a hearty and comforting soup!
- 8 ounces lasagna noodles, broken into pieces (about 10 noodles)
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 pound ground Italian sausage
- 1 teaspoon dried oregano
- 2 tablespoons tomato paste
- 4 cups chicken broth
- 15 oz. can crushed tomatoes
- 1 cup water
- 1/2 cup chopped fresh basil
- 1/3 cup shredded parmesan cheese
- 1/2 cup ricotta cheese, plus more for garnish
In a large soup pot, break and cook the noodles to al dente. Drain noodles, add a drizzle of oil, and set aside.
Place the pot back on the stove and heat up olive oil on medium. Sauté the onion and garlic for a few minutes.
Add in meat with oregano. Crumble and brown until cooked.
Stir in the tomato paste. Add the chicken broth, tomatoes, and 1 cup water.
Bring soup up to a simmer and let it slightly reduce for about 10 minutes.
Stir in the noodles, basil, Parmesan cheese, and Ricotta cheese.
Pour soup into bowls and top with a spoonful of ricotta cheese and additional chopped basil if desired. Enjoy!

Tips for making this easy lasagna soup:
- Keep a tube of tomato paste handy in the fridge to use for recipes like this one instead of opening a can. Then you can easily use as needed for other recipes.
- This soup is highly adaptable to taste. For instance, add some red pepper flakes to make it spicy, or use spicy Italian sausage.
- Next time I may try sauteing a bell pepper and zucchini or spinach for added vegetables along with the onion!
- I used ricotta cheese in this soup and some for garnish, however, if that isn’t appealing you can pour in a little heavy cream at the end instead.
- This is the first time I am using the new Caraway cookware pieces I received as an exciting Christmas present from my husband! I love this 6.5-quart ceramic dutch oven and how quality it is! Lots of my team members now have Caraway, and I agree with how amazing this line is.
Lasagna soup has been a long-time favorite for our family… the picture above is from when I made it back in 2016!
I love how the broth is AMAZING and so flavorful from the sausage. Even people like my hubby who claim to not love soups as a meal really enjoyed it. The leftovers are yummy too warmed up in the microwave the next day. Enjoy!
Make my favorite chicken pot pie soup in the slow cooker next!
Pinned! Looks delicious. Thank you!
Great – thanks Lauren!
This looks SO good! Can’t wait to try it!!
I love lasagna but hate taking the time to make it so this is a great solution! I can’t wait to give it a try…..thanks Lina!
I agree! Hope you enjoy 😀
Mom2boys, have you ever tried crock pot lasagna? So much easier!
Kayleigh, Do you have a recipe for your crock pot lasagna? I’d love to have a tried and true recipe from someone who recommends. If so, could you email it to me?
Sounds fast and easy! I will be putting it on the list to cook next week. Thank you!
Sure and thanks for reading Lolie 😀
Do you think it would work with another pasta?
Yes, for sure 👍🏻
Sold! I will be making this for dinner tomorrow-looks delish!!! Thanks!
Another great lasagna soup recipe is from cooking classy. My husband and I have it every other week!
So yummy looking! Must try
Thx . This looks yummy.. and it is perfect for fall.Plus.. it seems like I could put this on the table in about 45 mins ..
Sure! Yep -pretty simple and delish 😀
I think it’s the Barilla pasta company makes a tiny lasagna noodle that is easier than breaking up the full size lasagna noodles. A wonderful PTA mom made this in a crockpot and she left the noodles separate in a gallon ziplock to add your own noodles and they didn’t get mushy soaking in the soup.
Oh neat. Great idea!
Do you think it would freeze well?
They are called Campanelle noodles and I get them from Barilla, I use them when making this soup all the time! Perfect size and shape.
Looks amazing! I have my own version but use extra wide egg noodles and just cook w the rest of the soup. Even simpler! 👍
Sounds yummy 😀 – thanks Trinity!
I think this could adapt nicely yo the instapot
Looks yummy ..Vegetarian version pls?
Speaking as a 2+ year vegetarian, why do you need a separate recipe on how to make this vegetarian?? No meat, sub vegetable broth for chicken! I would add baby spinach and maybe garbanzo beans. If you wanted a spicy kick (and are ok with meat substitute), Trader Joes soy chorizo might be an interesting addition!
You could replace meat with lots of chopped veggies or even that product Beyond Meat plus add more spices like fennel seed and Italian spices.
This lasagna soup looks amazing! Yummm! Pinning! I love how Italian Sausage tastes in soups like Italian Sausage Soup http://www.munchkintime.com/italian-sausage-soup/ 🍲🍲🍲Can’t wait to try this lasagna soup recipe!😋😋😋 It’s a perfect soup to make on a cloudy days like today! 🍂🍂🍂
I agree! And your soup looks amazing too – love your pics. 📷
Thank you ☺️
I’m just having a hard time wrapping my head around the fact that there’s people who don’t like soup… haha I think I could live on soup. I make a different veggie filled soup each week so we can eat it for lunches and have it on hand in case we need a quick meal (to avoid hitting fast food places)
Ha! I know I love soup and leftover soup ❤️
Me too! My SO is very sick with GI issues and he can barely eat.
I’ve been making him every “gentle” soup that I can think of with homemade broth and the best ingredients I can find. 😀
Love it. Thanks for sharing and love reading the veggies options going to try it.Love lasagna.
Top with garlic bread cut into cubes…it is delicious!
That’s genius! Thanks Lori
Would this freeze well?
Did you try?
I’m not sure if my family likes ricotta cheese. We don’t usually put it in our lasagna. Is there another type of cheese that could be substituted?
Sure – cream cheese, goat cheese, or fresh mozzarella. I’d use a cheese they like 🙂 You can omit all together and instead use a little cream in the soup. The original recipe actually uses some cream with the broth. hope that helps.
Ok, thanks so much. Can’t wait to try it!
My mom always use mozzarella and cottage cheese instead of ricotta in her lasagna
Hi Lina! This looks delicious! Would this be a soupie that I could have in the morning instead of the Eggs and Breads some days? Also, what is a good dried oregano that’s good to have in the morning for breakfast?
Penzey’s has the best oregano.
Hi Lina, I made the soup for dinner tonight. It was a bomb. Hubby loved it and he ate 3 bowls. I didn’t crush the lasagna enough and the pieces were too big. Hubby cooked some shells and put in the soup. Yum! Thank you for this simple and delicious soup
Great Winnie! Thanks for sharing 😀 I’m so glad.
thank you so much. the whole family enjoyed this and it was the perfect comfort food on a cold fall night like tonight. i’m also pleased I didn’t have to spend time layering and spreading and waiting for the oven. will keep this for sure. thank you
Oh I’m so happy. Thanks for reporting back 😀
Any way to skip the crushed tomatoes? This sounds so good but I can’t eat the tomatoes like that. Maybe more paste and broth?
Yes I think that’d work! Or even some tomato or pasta sauce.
Would you use sweet or hot Italian sausage? Or personal preference?
I would say personal preference – I think I used mild 😀
Made this 2 nights ago for dinner and it was fabulous! I didn’t have crushed tomatoes so I used a can of tomato sauce and a can of stewed. I also added fresh spinach and a bayleaf. Even better the next day. A keeper for sure!
That’s so great! Thanks for sharing 😀
Yes, I made a very similar recipe from PInterest. You can find it under Carlsbad Cravings. It has a few extra ingredients, like the bay leaf you mentioned, and I think that’s what makes it extra tasty.
Had no idea tomato paste came in a tube so thanks for that tip! Is it found near the canned tomato paste? Or is it refrigerated?
Yes near canned. Look up on top row 👍🏻
Hunt’s sells something called “Recipe Ready” Tomato Paste. It’s a box of 6 pouches that are 2 TBSP each. I found it at WM.
Can’t wait to try this! I’m gonna make it using a bag of Jumbo Shells that I’ve been wanting to stuff, but haven’t gotten around to it.
I had every ingredient except the lasagna noodles, so I substituted those with ditalini and it turned out fabulous! Thanks for the inspiration!
I made this and it was the bomb.com
Yes!!!! That’s awesome
Got it. I think I am going to make thus soup today. Yummy!!!!!
Mmmm! I love anything with Italian sausage in it. I made Italian stuffed bell peppers last week with Italian sausage and Parmesan couscous. It was so good!
I cooked this recipe several times. And it is a winner in our house! Everyone’s loves it and it’s delicious! Thanks for reposting!
That’s so great! Thanks for sharing Lola!
Made it for lunch today. Way too bland for my family’s taste. Needs a lot more seasoning.
This looks great!
Lina, you are on fire today! 🔥 Between this and the air fryer tutorial, I’ve fallen in love with your posts.
Oh thanks for your kind comment! I appreciate you reading my posts.
My husband is diabetic & we have a similar recipe that doesn’t use the noodles & I use Bulk Sausage instead of the Italian Sausage. It is low carb/protein friendly for him. We just made it in the Crockpot last night. Yummy!!!
Made it tonight.. it was a huge hit!! 🤗
Love you Lina! Thanks again for another inspiring recipe that I actually want to try!
Ah THANKS! That’s so sweet. Enjoy 😉
Thank you for this delicious and easy recipe!! My 3yr old is on her second bowl and absolutely loves the soup!
That is such great news! Thanks for sharing 👍
Delicious! Just had for dinner it was a hit. Next time will use rotini noodles and add the ricotta (subbed today for mozzarella). Thanks Lina, keep the recipes coming!
Perfect! Thanks for sharing 👍
I’ve made this before and it is so good! I’d like to make it today, but I only have ground turkey on hand. Has anyone used this as a sub and did you add any additional spices?
I use ground turkey for about everything, just season it to taste & you won’t even notice 👍
Thank you, Rebecca!
Yes I’m sure that’d be tasty too!
I made this tonight it was really good. I added spinach to it.
Yay that sounds great!
I made this today with a few minor tweaks. The main one was that I bought malfada pasta rather than using regular size lasagna noodles. It turned out wonderfully and I will make it again and again. Thanks!
You’re so welcome, Guinevere! So happy it was wonderful!❤️
