If you’re looking for an excellent Cinco de Mayo recipe idea, whip up this great tasting homemade restaurant style salsa that takes just minutes when using your blender or food processor. It’s so easy and delicious – you’ll never want store bought again! 🙂
Two – 14.5 oz cans diced tomatoes (try the fire roasted variety)
1/2 bunch of cilantro
1/2 white onion
3 green onions
2 jalapeños, seeded (more or less depending on the heat you prefer)
3 cloves garlic
1 tablespoon lime juice
2 teaspoons ground cumin
1/2 teaspoon salt (or to taste)
Directions: In a high powered blender or food processor, add cilantro, jalapeno, onions, garlic, and lime juice. Pulse until chopped finely (if you like salsa a little chunky, just process a few seconds!). Add tomatoes and pulse a few times to combine. Stir in cumin & salt to taste and serve with tortilla chips. Makes about 5 cups of salsa. Store leftovers covered in the refrigerator.
