I buy extra and freeze them. Literally take them out of the package after theyโre cool and stick in ziploc bag and put in freezer. When I want to eat them, I put them frozen into crock pot on high for 3-4 hours and itโs just like getting them fresh that day!

I also freeze them, but I pull all the meat off first. The meat is frozen for quick meals (doesn’t even really need to be defrosted most of the time) and I freeze the bones for the next time I want to make homemade broth.
Another recipe is chicken quesadillas. I mix the chicken with some salsa and spices and put into a wrap and grill. Very good!

I always buy 2 from Costco, shred, and freeze anything I don’t cook with immediately. I made the switch from canned chicken to rotisserie in my buffalo chicken dip…wow what difference! It’s also great for chicken and dumplins and copycat chicken gnocchi soup! We also use it to top salads for quick meals.

We always buy 6 whole chickens and smoke them on the smoker, take the meat off and half a chicken goes into a vacuum sealed bag and in the freezer. So we have 12 frozen smoked chicken to just take out and make a dish with it. Easy peasy๐

I started canning chicken and other meat in 2020. I have come to prefer it over anything else, because if I forget to thaw something for dinner, I come home to my meal half made simply by opening a jar. We make Asian chicken salad from the chicken. Similar to Cheesecake Factory or ChinChin. So easy, chopped up chicken, shredded cabbage, scallions, chayote (or granny smith apple), shredded carrots, mandarin oranges. We make homemade Asian dressing, but you can use Ken’s. Ramen or Chinese noodles on top. Even the kids love it! Great for dinner or lunch.
